  • Pineapple filling is not very sweet, but it is very natural way of cooking filling without adding sugar and maltose. You also can taste the fiber part of pineapple. After you store in the fridge the filling still stays soft and not hard. Hope you enjoy natural way of making pineapple cake.

    Gluten Free Vegan Pineapple Cake
    Dough Ingredients: (It only make up to 19 pineapple cake)
    2 Tbsp Flax Seeds
    2 Cups Almond Flour
    1 Cup Oat Flour
    ½ Cup Arrowroot Flour
    2 Tbsp Fancy Molasses
    6 Tbsp Oat Milk
    ½ Cup Grapeseed Oil
    Form into balls first and then put into the fridge for 1 hour.
    Filling: (It can make up to 40 pineapple cake)
    3 Pineapples
    1 Lemon Zest
    It takes almost 40 minutes to cook until be able to form into balls. After it cools down, put into fridge for 2 hours. It will make the filling a little bit firm.
    Heart Mold:
    Dough 30g
    Filling 10g
    Rectangular Mold:
    Dough 25g
    Filling 10g
    Bake at 350F/180C for 14 minutes.
    鳳梨餡料不會太甜,放在冰箱取出來吃都保持軟軟的, 通常鳳梨餡料都會加入糖和麥芽糖,但這食譜沒有加入這兩樣也好吃。在吃鳳梨酥時,可以吃出鳳梨絲的感覺。希望大家會喜歡天然的鳳梨酥口味。
    無麩質純素鳳梨酥
    酥皮材料: (這個份量可以做19顆鳳梨酥)
    2 湯匙 亞麻仁粉
    2 杯 杏仁粉
    1 杯 燕麥粉
    ½ 杯 葛粉
    2 湯匙 黑糖蜜
    6 湯匙 燕麥奶
    ½ 杯 葡萄籽油
    鳳梨餡材料: (這個份量可以做40顆的鳳梨酥)
    3顆 鳳梨
    1顆 檸檬皮
    餡料需要煮大約40分鐘,捏鳳梨餡成球狀大約十公克,再放入冰箱2小時,讓餡料變比較硬一點。

    長方形模型:
    皮 25g
    餡 10g
    烤箱溫度是350F/180C ,烤大約 14 分鐘。
