Chicken Kapama: Greek Style Braised Chicken in a Tomato Sauce

    Chicken Kapama: Braised Cinnamon Chicken
    Serves 4-5:
    1 chicken, 3-4 pounds
    1 teaspoon ground cinnamon
    Salt and pepper to taste
    1/3 cup olive oil
    1 large onion, finely chopped
    3 garlic cloves, grated
    2 cinnamon sticks
    28 ounces canned tomatoes, unflavored and pureed
    2 tablespoons tomato paste
    ½ to 1 teaspoon granulated sugar
    1 teaspoon dried oregano
    Pinch of crushed red pepper flakes, optional
    2-4 tablespoons chopped fresh parsley
    1-pound pasta, cooked al dente
    ½ cup grated Parmesan or Kefalotyri cheese, for serving
    Directions
    Cut the chicken into about 10 pieces. Wash and pat dry. Season both sides with cinnamon, salt and black pepper.
    Heat the olive oil over medium-high heat in a pot and brown the chicken (in 2-3 batches) about 4 minutes on each side. Set the chicken aside.
    Reduce the temperature to low and add the chopped onions to the pot. Cook for about 10 minutes or until very soft. Add the grated garlic and stir just until heated through.
    Add the chicken with all of its juices back into the pot along with the pureed tomatoes, tomato paste, cinnamon sticks, salt, pepper, oregano, and sugar. Mix to combine.
    Bring to a boil and immediately reduce to a simmer. Cover the pot with the lid and simmer for one hour.
    Remove the lid and increase the heat to medium. Cook uncovered for an additional 30 minutes so that the sauce thickens. Taste the sauce and add more salt (and sugar if acidic) if needed.
    Garnish with chopped parsley and serve over pasta and grated cheese.

    Omg this is delicious! My mother made it hundreds of times when I was growing up in the 70's ,even today in her 80th year! She calls it "κότα κοκκινιστή" but this is exactly how she makes it too with the cinnamon and rice. Thank you Δημητρούλα μού! ⚘Now I can make it myself!

    O.M.G. just finished making this dish. Cold, damp, and wet out...perfect for today! Hands down another Gr8 recipe!!!
    I thought I had orzo.. just mini wlbow..so I added 3 c water and pasta, salt after chicken cooked on stove and mixed it all and in oven at 400 for 1 hour.
    Kinda combined the shank recipe🥰👌👍

    My family thinks I'm a little weird because I cook with cinnamon a lot... I find that it "warms up" the flavor of a lot of dishes without overpowering them. I use it in chili, for example, as well as in tomato sauce for pasta, and when I make chicken soup in a slow cooker. Thanks for sharing this recipe.

    Oh yum. I haven't had kapama in years, since my mother made it. But I will now! I use cinnamon and a pinch of allspice in most every tomato based dish I prepare.

    This was my dad’s favorite dish. My mother used to make Kapama but with beef for new year served with spaghetti! Yaaaay Thank you for the memories.

    So I was looking for something to cook with tomato and cinnamon in it, and came across this video I made this dish, I had made a pizza sauce a week ago and I use the sauce I didn't have the tomato paste but I did have some RED BURGUNDY couple the tops of it did just fine. this was the best I made some Jasmine rice. So I had guess out of town they called me and said they couldn't stop thinking about that sauce. Lol. I want to do a pot roast with the same sauce.

    I make this the same way, its so beautiful and I love cinnamon. I serve it with bulgar pilaf, that's the Cypriot in me :)

    I've heard kapama put in the recipe. They used lemon as well as sour cream is that traditional as well
