    I was always taught you have to leave around 1/4 inch of fat on the bottom to keep moisture.

    I have the same knife for trimming my briskets What is a good knife sharpener for trimming , brisket knives etc And would it also work on my dalstrong chef knife ?

    I've never cooked a brisket, I've always smoked Pork Shoulders and Butts. What temp do you smoke a brisket and how long per pound? I had a friend ask me to smoke 3 briskets at the end of March and was curious.

      Totally up to you on how much you trim. This is probably closer to a competition style trim, but I like to cut off a lot of excess fat as I go.

    I've got a 14.9 lb. prime packer that I just pulled out of the freezer. My crows request an aggressive trim. I think they have an agenda, what do you think?

      @@HeathRilesBBQ What of your rubs do you recommend for brisket? I have Sweet, Honey, Pecan and Jalapeno Garlic. I also have Harry Soo's mixture of salt/pepper/celery seed.

      @@CosmicStargoat Garlic Jalapeño and Pecan would work great. If you can get your hands on our Competition BBQ or Beef Rubs, those would be good one as well.

      @@HeathRilesBBQ Anyway, while the brisket is being trimmed, tonight...Hanger, or butcher's steak. This cut of steak is simply the best. I'm going to test your rubs on this delicious and tender cut of steak.
