Trinidadian Chicken Pelau

  • Due to the various multicultural influences on Trinidadian food, we have a lot of unique dishes that we call our own. Pelau is one of those dishes that has a lil' touch of everything in it and that's why it's one of our national dishes. Pelau is similar to the African and South Asian dish, Pilaf and also to Guyanese Cook-Up. It's a one-pot meal that is filled with goodness.
    You can add any type of meat and veggies to it. Follow my simple recipe and you'll definitely enjoy it! Enjoy this with some Kuchela, Coleslaw or a nice salad.....you won't be disappointed!
    This recipe will yield about 6-8 servings.
    Ingredients:
    2 lbs of chicken, cleaned and washed
    green seasoning
    salt
    black pepper
    soy sauce
    2 tbsps ketchup
    1 1/2 cups of rice
    1 1/2 tbsps brown sugar
    oil
    1 cup of frozen pigeon peas (boiled for 10-20 minutes)
    2 small carrots, chopped
    3 pimento peppers, chopped finely
    1 whole stalk of celery chopped finely
    1/2 bell pepper
    2 stalks of scallion, chopped
    1 can of coconut milk
    1 pack of Maggi vegetable soup mix (*Optional)
    Golden ray butter (*Optional)
    hot pepper* (optional)

    I am looking at this in Dec. 2021. Although this was done in 2015, you have improved so much since you started. Thank you and keep up the good work. The only thing that I do differently is stew the peas first. I also add a little bit of pumpkin, that makes it wetter and about three pigtails chopped in small pieces. I know some religions don't use the latter. This is how I was taught by people who would have been in their 100s now if they had lived. Some people even put raisons in it.

    I made mine with beef. I couldn't find Golden Ray butter though. It looks great and smells amazing! The green seasoning adds a bit of a kick to it!

    +Tina Craigg Hey, you can but I won't recommend it. When olive oil reaches a high temperature it's no longer healthy. However, you can put the sugar in the pot without any oil and it will still give the same result. No oil needed. Hope this was helpful! ☺

    Dear Taste of Trini: I prepared your rendition of Pelau. Oh, My Goodness! It was so darn delicious! Even though I live in the States, and am not fortunate to have some of the same produce items. It was still amazing! This will be a stable among my food menu. I did, however, purchase Goya's (Pigeon Peas) and Goya's (Culantro Base). Thank you!

      Taste of Trini ... interesting you sent this message 1 hour ago and I just turned off my pot 1 hour ago.
      So as I mentioned before this is the first time I'm cooking pelau. I use Approximately 90% of your method. The difference is I used duck instead of chicken and I added bay leaf to the stew when I was preparing the meat...
      The taste is FANTASTIC! ! Your recipe is excellent. Thank you for sharing. You have a new subscriber.

    Your Pelou rice made me hungry here in TORONTO. WAS BORNED IN GUYANA but my sister -in in-law is a Trini.and she used to make it.She passed away and I rally want that receipe. Thanks for sharing it with me in canada.we have green seasoning ;cock spur soup mix.what about some soy sauce,thine and rosemary?you are every pretty cook.your husband is lucky to have you.i gotta cook although iget aguyanese girlfried(lol).

      Don't use rosemary. Stick to W.I. green seasonings. Otherwise it is going to taste different. Pelau has its own authentic taste.

    You cook pelau exactly like me...I realise most people do not season the rice after it is added to the chicken. Looks scrumptious especially with the pepper😊😊👌👌

    very well done honey keep it up plenty people don't know pelau is a hard food to cook although is one pot you have to master it because if you don't is either it come out hard or like mix rice keep it up

      Modern version, but I will try your recipe. When I use fresh pigeon peas, I usually cook them separately with pigtails and pumpkin and I add them just before I put in the rice. We did not use carrots or stock, just water or coconut milk. If you want you can also put in some raisons but not a lot. Thanks for your site because living abroad has caused me to stop cooking a lot of our foods.

    You are such a great cook. My boyfriend loves the recipes I've nabbed from this channel. Just a little word of advice. Use a plastic or wooden spoon. That metal spoon will ruin a non stick pan.

    hi i actually used your recepie and the taste was lovely but my weak point is the rice has to be cooked or as they say in trini till it burst or like fried rice

      Hey, it depends. Some people like a drier pelau while others like it wet. If you want a drier pelau, then do it like fried rice. If you want it more wet, then let it cook until the rice gets soft all the way through

    Hi Reshmi when I do my pelau the rice comes out very soft and mushy. What can I do for the rice to come out more grainy.

      Hey Nigel, depending on the rice you use, that's how much liquid you add. For parboiled or jasmine rice, use 2 cups of water to 1 cup of rice. For basmati, use 1 cup of rice and 1 1/2 cups of water. You need to cook it on a low heat when you add the rice. Cover and let it steam and it will be more grainy.

    My brown sugar turned to rock candy when I added my marinated chicken. What did I do wrong??

      The only time it turns to rock is if it cools too quickly, like if you let it sit with the heat off. As soon as you see the sugar turning color and doubling in size,that's when it's ready

    Does Golden Ray butter have a stronger butter flavor than what we get here in the states? Is there a major difference between Golden Ray and regular butter?

      Yes, there's a huge difference. Golden Ray butter has a totally different taste and a higher salt content

    Love your videos but when you add your chicken to the hot brown sugar try to reduce the amount of water (Gravy) you have so you can let the chicken brown nicely nah

    I enjoyed watching your video, and loved the ingredients that went in. Once you added the coconut milk, you should've just used a fork and not the spoon ,anymore, also instead of adding more water,all at once you should have spooned the water over the rice, and fluffed it with a fork,cooking the rice on a low flame,that way you would've steamed the rice down as in a pliau. try this tip next time, after all that water was used up, you could then turn of your flame. and after 20/30. mins fluff the rice again with the fork,so as not to let the rice clump up..once you've turned off the flame do not fluff the hot rice, as you'd be breaking it, so use the above mins I mentioned.

    Health Corner: Remove fat and blood from chicken, skip the Maggie because of the MSG, skip the oil, skip the golden ray butter, skip the sugar and add ginger. Have a longer life.

      If you don't bun the sugar and brown the meat then it will not taste the same. That is the main base for pelau. The salt butter and other powdered package could be left out but I use unsalted butter.
