COPYCAT Original Coney Island Hot Dog Meat Chili Sauce Recipe
INGREDIENTS:
1 1/2 pounds ground beef
1 to 1 1/2 cups water - add 1 cup at first and add as needed
1/2 cup finely diced onion
2 cloves garlic
1/3 cup ketchup or tomato sauce
1 Tbsp. mustard
1 Tbsp. Worcestershire sauce
2 tsp. brown sugar
2 Tbsp. chili powder
1 tsp. cumin
1/2 tsp. celery salt
sprinkle of cayenne powder
1/4 tsp. black pepper
salt to taste
Put all ingredients in cold pan and stir to combine.
You want the ground beef to separate into small granules.
Turn heat to med high and bring to simmer.
Turn down to low simmer and cook for 1 to 1 1/2 hours.
Add water as needed to the consistancy that you like.

I love it when the dog fits the bun! When you have a long hot dog and an inch or two sticks out, I feel like I'm cheated! Also, poppy seed buns with celery
salt, dill pickle and ppepperss, or not! A dog with chili IS ALWAYS GREAT!

I have made this several times. It is WONDERFUL!!! AND ... it freezes well. I freeze it in portions in a square covered plastic container. Once frozen I pop it out and vacuum seal it. I've kept it for over 6 months (because one of my packages got lost in my freezer ..normally it's eaten before then).
This recipe is the bomb! I swapped out beef broth for the water and it was perfect! Delicious! Thanks for a great recipe!

Hello Tess! I live in the area of the US known for excellent Coney Island sauce and actually scored a recipe from a local hot dog joint known for their sauce and their secret is also to mix the sirloin with cold water to break down the texture. This recipe was spot on. Fantastic A+
i have made this chili several times now and let me tell you, it is fantastic. Not only do I use it on hot dogs, but on chili cheeseburgers also. So very good!!!
I love hot dogs with mustard chili & onions. I've never seen chili made this way by mixing water with the ground beef then everything else. It turned out so nice. You took me to school today Tess. Very good sauce. You are right, the sauce is very ugly and unappealing before it cooks. After it cooks , it changes colors and is heavenly. The aroma of the sauce cooking is great. This will be my go to hotdogs sauce at all of my family gatherings. Thanks so much for taking the time to share it with us.

In Worcester MA is George's Coney Island and they have the best chili dogs outside of NY. I knew George's wife Catherine and she would have boxes of chilli dogs sent out for me and my fellow nurses to have for lunch! They always have long lines ...your recipe is just like hers!

Thanks Tessie, I always wondered how they got the meat so fine in it. Adding water is the trick. I prefer a sweeter sauce to a spicy sauce so this would be easy to adjust the spices in! Learn something new every day!

I've been making hit dog chili the same way for nearly 40 yrs. Always start out with the meat and water, and the last 15 yrs. I started using Frank's Hot Sauce instead of dried cayenne. Thank you - - I just felt like doing some research on an old favorite.

Gracie's Coney Island sauce was the best store-bought coney sauce out there. Well after the pandemic I can no longer find it in my local supermarkets so definitely giving this a try thank you and stay safe.

You are so right. This is delicious. I made it for the 3rd time but I made a couple of changes. I left the Cheyenne Pepper out because it is still plenty spicy enough and also added 2tsps of potato starch to 4 TSBP of the water in a separate cup, mixing it well. Toward the end of the cooking I mixed the starch and water again and added it to the sauce mixing good while cooking the sauce down to the consistency I wanted it. The reason I did this is I can heap the Coney sauce up on the hotdog and don't have to worry about an oversize bun so the sauce don't fall out anymore.
Please don't feel insulted because of the changes I made because I make changes to almost 100% of the You Tube recipes because I'm a really picky eater.

I do something similar but half water half beef broth in bowl and use a glove break it up takes like less than a minute and add to pan cook meat and add onions at very end so they just cook and have a little texture ...

Been looking for a Coney Hot Dog recipe and found this one. Similar to other recipes, but had additional flourishes that I thought were worth exploring. It was AMAZING! My wife has had on-site Coney Island hot dogs and thought this was the best boiled hot dog she'd had in 30 years (I put grilled dogs in a completely different category)! She even ate a second dog, which she never does.
I thought the "Cooking/separating ground beef in water" technique was incredible. I'd never seen that before but it worked like magic. Much simpler than I expected it to be.
Anyway, great re-creation and a delicious recipe. We don't eat hot dogs very often, but when we do this will be the recipe we follow.
A note to potential readers: For best result, you MUST steam the hot dog buns. I used a three-piece steamer pot. Boiled the hot dogs in the bottom, then added the steamer insert with buns and gave it a minute or two. The texture change in the bread is over-the-top.

I made a small batch of ketchup with my garden fresh 'Amish paste & San Marzano' tomatoes for this.
The only other change I made was adding a 1/4 tsp of MSG to boost the flavors even more.
The ketchup is delicious, but it's going to be a while before I know how the chili turned out. (I'm betting over the top GREAT!) *Thank you!*

Looks good YUM I like to use beer rather than water, and i like black pepper and cayenne peppers Plus bacon bits in mine. I also prefer red franks over others! Each there own ways I also make like 16 of them wrap and freeze them. just pop it in the micro wave. Just some ideals CHEERS

Dial back to 50s, loved a couple Greek Hot Dog shops in Des Moines Iowa, have not had one since, hard to find,,great midwest Chili dogs also,,lost art/or just no market,,we have every fast food available within a mile or two,,,Freddys is it.
