  • Hello viewers! Today’s recipe is Korean Mozzarella Cheese Ball from scratch.
    It’s crunchy and chewy outside, warm and flavorful cheese inside of it.
    You can see cheese ball, especially from BHC(the chicken restaurant in Korea) in lots of mukbang.
    In Korea, people are making a copycat of that with selling glutinous-doughnut pre-mix.
    But because of it's product form Korea, so If you are not live in here, it's hard to find. So I thought why not show you guys how to make cheese ball without pre-mix!
    It’s not perfectly same taste and texture, mine is more crunchy texture than BHC one.
    For water, I wrote 60~80ml. Amount of water is really making difference with what brand of glutinous flour is, and what atmosphere you make.
    If your dough is too dry, it’s hard to roll the dough with mozzarella cheese. It easily breaks apart.
    And If it’s too wet, It has another problem.
    The dough has to be like baby’s butt… you know? 😭
    I can’t fully explain about it, but it has to be moist like proper bread dough!
    Another important ingredient is salt.
    Glutinous flour is not like normal wheat flour(I mean, bread flour, all-purpose flour etc…).
    It REALLY NEEDS SALT.
    If you don’t add it, it tastes like nothing. No taste at all 😂
    I added only mozzarella cheese, but with adding little bit of cream cheese, it will better.
    Mozzarella cheese can substitute with string cheese :)

    🌙Ingredients
    100g(2/3cup) glutinous flour
    25g(2 1/2Tbsp) all-purpose flour
    2g(1/4tsp) salt
    15g(1Tbsp) sugar
    0.5g(1/8tsp) baking powder
    15g(1Tbsp) unsalted butter
    60~80ml(1/3~1/4cup) hot water
    Mozzarella cheese
    1. In a bowl, mix well with adding glutinous flour, all-purpose flour, salt, sugar, and baking powder.
    2. Add little amount of hot water and mix. If it gets crumbly, add butter and mix with your hand (not knead, really)
    3. Add water and mix until it clumps into a dough. And rest the dough for about 30 min.
    4. Cut the mozzarella cheese into a cube shape.
    5. Divide the dough for about 20~25g (1 heaping Tbsp) and roll with mozzarella cube.
    6. Put the oil 160~170C / 320~340F and frying for about 7~8min, until golden brown.

    I've been craving for korean style cheese balls so thank you so much for the recipe! I couldn't find anything online as the korean recipe videos all seem to use the ready made mix. Btw, what is pastry flour? Is it the normal flour?

      I forgot to change that into all-purpose flour! Basically, pastry flour has low gluten in it, so It doesn't rise like bread dough, it's more suitable with making pastries, cream puff, cookies, etc...

    Did this just now but I altered the recipe. 1 cup glutinous flour, 1 cup normal flour, 1/3 cup hot water, 3 tbsp sugar or more, 1 1/2 tsp salt, 2 1/2 tbsp salted butter, 1/2 tsp yeast (activated first) . Mix well into a smooth dough and leave it for an hour. Then just ball it up and fryyy. It taste sweet yet savoury with stringy mozarellaaaa💓

      It might be the cheese you are using (I suggest low moisture mozzarella) you could also put it in the fridge for an hour before frying. Also check the oil temperature :)

    Tip! Melt the cheese and then add and then half tablespoon of condense milk to the cheese, it tastes exactly like the street cheese ball! 🤤😋

    That looks AMAZING!! that is the firts recipe I found for that type of cheeseballs!!! but was if I want to put that famous cheese powder that is called (sorry if i am wrong) bburinkle bburinkle!!! What is it exactly? I tried to find on amazon canada but there's nothing even close to that!! :)

    I tried this recipe and when i fry it IT EXPLODES😭😭 (after few minutes of frying, the balls suddenly explodes)i did all the measurements accurately and followed the steps thoroughly. What did i do wrong😥😥

      Almost 1 tablespoon. You can add less, or more. The point is not pop out while frying.

      Papaours Hijab Pastry flour has a low level of gluten, which keeps the bread from rising as much as when comparing it to normal flour.

      냉동실에 넣어두고, 만들기 한두시간 전에 꺼내 만들어서 드시는걸 추천드려용 :) 단시간이라면 냉장고도 괜찮을거에요~!

      No chapssalteok is mochi with red bean paste and strawberry. In korean it's called 치즈 벌 aka cheese ball

      no it's not.glutinous flour and rice flour are two different things.well if u go to grocery,just ask the worker for glutinous flour.
