I’ve used dipping chilies so many times in my videos. Some of you are always asking what it tastes like and why it can be dipped with anything. To be honest, this is just how it is in Yunnan - “Everything is dippable”. There’s nothing a plate of dipping chilies cannot fix. If there is, two plates then!

She is so calm,that's why i watched her channel although my food is different from her food,but her cooking skills are so satisfying.
I made a somewhat successful attempt at making Dianxi Xiaoge's Dipping Chilis. However, I simply did not have the massive quantity of chilis that she had. Nor did I have the Litsea or the green Sichuan pepper. I substituted coriander seed for the litsea (from what I understand it has a citrusy, somewhat peppery taste). The Taso-Ko powder was also confusing me until I discovered it was black cardamom. I toasted my chilis, de-stemmed, and put them into a stone mortar. I gathered all my spices (black pepper, 4 black cardamoms (Taso-ko), 3-star anise, cloves, fennel seed, orange peel, cumin seed, 5 bay leaves, 2 cinnamon sticks, and coriander), and toasted them up until fragrant. Put it all into a spice grinder and ground it up then added it into the chilis. Added in salt, toasted sesame seeds and luckily left out the dried Sichuan peppercorns that I almost added in. It was hot enough as it was and certainly didn't need the mouth numbingness as well. It definitely works and is very spicy and delicious. I will most certainly make this again!

Hi, may I ask can you write up the quantity of the ingredients used eg how many grams of dry chillies or any non familiar ingredients what would be available as an alternative thanks.

I always come back to this video before making this spice mix again. I just love it. For those wanting to make it, I think it is important to just give it a go. You can just scale it down to make a cup or two total. I think there is a little bit of play in the ratios. I started buy counting those whole cloves on the tray. I was able to recreate a similar ratio starting with that. One you see what 30 or 40 cloves looks like you can go from there. The Litsea is very hard to get so you could use dried lemon peels (I dried my own) Lemon and orange peel keep for a long time when dried so give it a go and store in a small tight jar until you need them. Anything with a strong pleasant citrus smell will work probably. Just wing it. The peppers....There is a lot of play here. Just figure out your tolerance, but a variety of sweet and spicy peppers of your liking and grind them up. Make a couple cups worth, say have sweet and half spicy. I grow and dry my own so I get a nice diversity of flavor. You cold use chili flakes and sweet paprika etc etc. It will never be exact so experiment each time you make it. You may want a stronger flavor of a specific spice and that is ok. Even after you make and mix, you can add things to balance it out or lower the heat or increase the heat. Be brave and have fun. ☺

Hello is me again. Dian xi xiao ge had used this special chill powder in lots of her cooking and it had appeared so many times in her videos. In this episode, she is releasing the secret recipe of this chili powder. It mainly consists: star anise, fennel, bell pepper, black pepper, cinnamon, litsea cubeba, cumin, clove, bay leaves, tsaoko, sichuan green pepper, sichuan red pepper, Dijing pepper and "qiu bei jiao"(a special chilli in Yunnan).

Love the tissue in your nose, so smart. It’s hard work to make good food all fresh and natural. In USA we take for granted the work and expertise it takes to provide what you do on a daily basis. You inspire me and make me want to get back to agriculture, canning and pickling. Thank you!
In India too, the housewife does everything from scratch though in cities, people do rely on packeted flours and pulses and have modern gadgets. The difference is Penjie does all this with such a gentle and cheerful grace,which is difficult when you do this thankless task on a daily basis.

Very strong aroma.
The dust got in her nose if you grind things into powders and inhale it it might cause sneezing to much could give you respiratory issues for short to long times depending on how much you breathed in so if you don't have a mask or scarf for your face that's the best thing to do.
Even just from the smell of roasting chillies, you'll be coughing and sneezing like hell😁😁
