Loved it!!! I could watch you all day ( but then I'd get nothing done 🤣🤣) I wish I could get my cakes as smooth as you, I do it and do it and still have a blotch or so, frustrating and I've been doing cakes for a while, still drives me nuts. Someday!

Thank you for clearing up the ganache ratio for me I saw somewhere else where they said it was 1 to 1. What would that do to the ganache? Thank you also for showing how to cut a cake in half properly. I've been scared to try that I'd mess it up. 😫 Thank you for sharing and keep on caking 💜
You can do 1 to 1 ratio but that would be more for a dark chocolate drip or to pour on the whole cake as a glaze. It would be too thin to use as a crumb coat or final coat. The trick with the cutting is to not second guess yourself, steady your arm and just do it;)

Happy New Years to you too! I don't have videos on my cake recipes yet because we use most if them at the bakery I work at and I told my boss I wouldn't do that, at least not yet;) I do have some buttercream tutorial in here though!

beautiful cake! Are you able to please link your mat that you work on for fondant? The ones I have are so small
My boss actually bought that one, but I think it is actually supposed to be used for sewing and quilting. It is a self healing mat. I hope that helps!

Can this design be done over buttercream with no fondant?
I hesitate because moisture can easily warp the rice paper;( If you do try, I would suggest a crusting American.
Can you attach the wafer paper to the ganache using piping gel?
I have never tried! I think it would work, but you would see the darkness of the chocolate thru it. Unless you did white chocolate ganache....
