I was literally was there with my family and friend in the audience back in 1988. As I watched this video now, I saw us appeared 8 different times in this Episode. I still have Martin & Jacques autographs in my scrapbook and had made the Ballotine Chicken successfully.

You can tell Jacque is in a league of his own. So young, so precise. He is and always will be my inspiration. From a young boy watching him and mrs Child’s, to a 33 year old chef cooking “fast food my way” with my daughter and hopefully one day with my granddaughter. He is a culinary master and father that I inspire to me. Merci chef... Merci Jacque.

So many memories, so many feelings of comfort and warmth.
Martin Yan is such an amazing chef. I remember having hard days growing up. When he was on T.V. he made it so I was able to be in the moment and let go of the hard aspect. I feel the same today. Also, I love the way he and Jacques cook together. Thank you for sharing!

Jacques is a master. Martin Yan is a great chef but you can clearly tell he is in awe of him. The way he dresses that chicken is unreal. I don't think there are many people that have that kind of skill with a knife. That takes years and years of dedication and a love of cooking not to mention he probably had great teachers in France.
jacques came to impress, and impress martin he absolutely did, going all out on the chicken and doing it with a puny knife relative to the chinese knife martin uses. happy to see the respect was mutual, too, jacques happily praising martin and the things he learned from chinese cooking

I watched a video of Jacques Pépin deboning a chicken and felt so inadequate when it took me about half an hour. Seeing Martin Yan's awe makes me feel a bit better.
Both of them have done thousands of dishes / prep. Jacque, is classically trained. He started at the bottom. He probably did crates of chickens every day. Same for Yan..... Decades of perfecting the craft. Prep work is hard work.
I love cooking and I love watching two other masters that are passionate about cooking as well. And they share their craft. Labor of love showcase for sure.

What a joy to see these two together!! The 80s and 90s were the golden age of cooking shows in my opinion and I spent my weekends with my father watching Martin Yan, Jacques Pepin and others make cooking accessible to us mere mortals. While I do not consider myself a good chef, I can make a decent meal.

2 legends at work...but can’t get over how Pépin ate a touch of that pepper off his finger after handling that raw chicken.

To look at them both you can tell how long ago 1988 actually was. Martin Yan is in his 70s now, the venerable Jacques is in his mid-80s.
