- Hi folks,
I hope you’re having a great day so far! Welcome back to what’s for tea, and I hope I find you all well :)
Today I’m making traditional Scottish fern cakes. These are very similar to Bakewell tarts. A beautiful sweet sort crust pastry case…filled with a layer of strawberry jam, almond frangipani and topped with icing! Delicious :)
Traditionally you’d draw a little fern design on to the top of the icing (that’s where the name of the cake comes from) or half of a glace cherry would also work (this is best if you’re using cherry jam).
I’ve listed everything I used below…in case you want to give it a go for yourself.
Thanks for stopping by and until I see you next, take care x

These were in every baker when I was a child growing up in Scotland. I loved these - and the lurid yellow pineapple tarts!
Thank you very much! I have been looking for a proper recipe for fern cakes for years. My Great Auntie used to make these for us! I miss those wee touches from Scotland. My mom is 90 and she doesn't remember the recipes anymore. Of course they didn't measure anything they just seemed to know how much by sight. They bring back so many childhood memories. We used to visit my spinster aunties in Dundee and they always made sure they had some fern cakes just for me. Ah I miss those days. Now I can pass on the traditions to my daughter in law.
Same Linda :) I don't have any kids of my own....but My other halfs Daughter is a real foodie, which is nice :)
Oh, they take me back to my childhood. Fern cakes, Fly Graveyards, Strawberry Tarts and Snowballs were all regulars in our house.
Yes, David! I loved all those as well. I used to love meringues, too, with the thick cream holding them together.
Really pretty Cheryl. Lovely treat at tea time. Thanks!
Oh wow these look amazing I want to give these a try. My Irish Grandmother used to make the big, multi serve Bakewell Tart for us when we were very little. She would change the jam each time she made it. My favorite was sour cherry, lemon butter, Lime marmalade or apricot. We loved them so much and after my grandmother passed no one else could make them the same. This recipe might just be very similar, fingers crossed.
Them jam fillings sound delicious
Love your Scottish recipes ! My family is from UK and I grew up eating a lot of Scottish food. (I live in Canada.. so I miss foods from my childhood ).
I'm from Canada as well! My family is all scottish!
Same here!
Hi Cheryl, these tarts are delicious! I made then last Christmas and had rave reviews. FYI to anyone making them the Frangipani is very generous. I only used half for my dozen cakes. It freezes perfectly. This year I am going to double the pastry and make 2 dozen! Family will be very happy. This is now a special treat for just at Christmastime. Thanks for sharing.
I come back to this video time and time again whenever I feel nostalgic over the bakeries of my childhood in Glasgow. City Bakeries, Crawfords, the little independent on Dumbarton Road. All had their regular items and their specialist items. I always knew a valued family member was going to unexpectedly turn up for tea when my mum bought fancy cakes from a bakery. 😄
Your sweet shortcrust pastry looks super. Well demonstrated for folks who are a little afraid to try from scratch.
Never heard of Fern Cakes; they look wonderful !!

Thanks Joe :) They were fab! They're quite easy to make...they just take a wee bit of time x
I love these growing up. But my sons have a nut allergy, so I use vanilla flavor instead of the almond, and instead of the ground almonds, I substitute the almonds for coarse cornmeal. It has a similar texture, but it is safe for those who have nut allergies. Lovely video! Thank you!
Wow! Beautiful looking & delicious! Thumbs up! xx
Thanks Rosie :) x
That's awesome video of fearn cake's to make some for the holidays Scottish food etc.
These sound delicious! I will try them soon.
They really are Rob :) They take a little bit of time...but worth it in the end!
My mother in law loves these but they are hard to find. When I was just visiting friends in a city far from where I live, I stopped into the Scottish bakery there and bought her some, along with a few other goodies, but of course I forgot them when I left. So close! Then I thought, I’ll look up how to make them and I just knew What’s for Tea? would have a recipe and I know 100% it will work out, so I’ll have to give it a try to make up for my terrible blunder.
Love a fern cake

Beautiful as you!!! Perfect!😘😘😘‼️
As always...thanks Sue :) Lovely to see you x
Around Valentines Day instead of using chocolate on top and making a fern design I use a little red icing and use a toothpick to fashion a ❤ outline on top..Happy Valentine's Day.
I'm making these next week, have the ground almonds and almond extract in my Asda order 😂
Fab Maureen :) They're quite easy! Only fiddly bit is the pastry....let me know how your go x
@@WhatsForTea I will 😅
bakewell tarts were one of my favs as a kid. Break time at skool we'd head down the road to the bake shop, for me it was always a toss up, bakewell tart or rock cake......😁

Please do Linda :) Let me know how your turn out x

Do you think I can make this eggless? Btw they look incredible ❤
Hello from Canada! Haven't had a Fern Tart for many years. Will be making them soon. Could you tell me could they be frozen before or after they are iced?
Judith Boroniec Hi Judith 😊 I’m really not sure...I’ve never tried freezing them I’m afraid...but thanks for watching.
Love the recipes but the amount of butter makes my heart skip a beat.😍
Butter makes it better!
this tart is a bakewell tart from bakewll in england a town in England its named after
Can you make tipsy cake please
looks lovely. Have you ever tried using ice cold milk instead of water for the cases? My Gran used milk in her pie crusts. great richness.
That's a great idea! Haven't tried that yet :) Next time though! :)
🌹🌹🌹🌹🌹
RESULT!!!! These were a staple part of my childhood. Nobody here in the Colonies sells them anymore. Not even the so-called British Stores. These will surely be a part of my family Christmas bake swap from now on. By the way: Honey butter and apple butter are also just a myth over here nowadays. Do you have a recipe for these?
Can you make pineapple pasterys or pineapple buns
My mum used to make them and taught me, score with a knife
These look lovely Cheryl, Love the tattoo on your wrist, Is it pentagram,?
Hi Sheila :) Thank you! It's a heartagram ;) Just a symbol used by a band I like.
@@WhatsForTea Its cool Cheryl, I liked it 😊
Baking pudding
Im Canadian
We can't bake
Lol
You're Canadian....so you're lovely :)
Lol
Im actually a baker
@@bradcurrie6706 Oh! Brilliant :) I'm not lol...I try though.
I am canadian. I lived in Mexico and opened a bakery out of my home. I can bake. 😊🇨🇦
I'm British, live in Canada, the flour is different here so baking is different, I have to try a few adjustments until I get it right. I should get my family to send me some British flour over!😊
B
Av not heard of them 😂🤷🏼♀️
lol :D That's what I mean!
WAY too much frangipane half that and you'd still have stuff left over.
That tattoo ......are you a witch?
