Spain is very different, the north from the south, and a city from a town. Relaxed in the towns, the cities are busier. The north is very cold in winter but in the south the winter is warmer. In summer it is the other way around in Asturias in August it can be 26ºc cloudy and in August in Seville it can be 44ºc. But if it is a very safe country, with very good gastronomy, art, sports, landscapes, castles, ecosystems, animals and plants, etc... I advise you to watch a video that will surely surprise you. Kudos to you for walking a different path! My son will attend university in Europe next year, possibly in Spain but we're still looking at options in the Netherlands and the UK. I think he would thrive in Europe for the reasons you've outlined here.
About the eating times here in Spain, it's not only "eating" times, but "living" times, because our timezone is *WRONG* since 1941 as we should have Britain's UTC/GMT+0 instead of Central Europe UTC/GMT+1. Besides, during summer one additional hour is added so in the end, we have *2 HOURS* of displacement with the real solar time. That's why we have lunch at 14h instead of noon, we use to have dinner at 21-22h instead of 19-20h like other countries. In fact our lives go with the sun exactly like evey other human being. A related topic is that the country "seems to stop" for a couple of hours after lunch because in summer it's really *TOO HOT* to work because we reach 39-40ºC (102-104ºF). That doesn't mean that Spaniards are lazy at all, it's something that also happens in the Middle East, India, Thailand and similar latitude civilizations. Small shops usually have split time and are closed 3 hours (1 for lunch and a couple more for resting, some people take a nap "siesta", but most DO NOT, it's a false stereotype) and reopen later from 17h until 20h. However office workers don't stop at all, start at 9 AM and use to finish at 6 PM (that is, 8 working hours + 1 lunch hour ). Also big Department Stores have enough logistics to handle 2 shifts and are open twelve hours from 10h to 22h at night.
I'll bet the contrast in the jump from Northern Ireland to Spain was gargantuan, haha! Valencia is definitely a place I could move to tomorrow, all being simpler

I'm from Valencia, and a very common mistake in foreigners who make videos about different parts of Spain is to put flamenco music in them. They think that this music is typical throughout the country, which is not true. Flamenco is typical of Andalusia, nothing more. In other areas there are other completely different folklores, although it is possible to find some flamenco tablaos where you can listen to this type of art, but in very restricted and private areas. Why? The cost of living is quite high in many metropolitan areas, cities, and towns in the US. And, health care in the US is outrageously expensive. Overall cost of living in Spain, Italy, France, as well as many other European countries is much less and the food, in general, is healthier, of better quality, and significantly cheaper.
Buenas, en los ingredientes te equivocaste, aceite de oliva, cebolla, pimenton dulce y pimenton picante, ( al gusto) harina o maicena, y caldo de ave (pollo) en algunos lugares agregan un poco de tomate y cayena (segun gustes), pero eso que te pusieron a ti, no son patatas bravas ni de lejos ademas la presentacion deja mucho que desear... Para comer las bravas autenticas tienes que visitar Madrid cerca la la plaza Santa Ana, en el barrio de las letras, el local se llama "las bravas" tienes otros lugares, como Docamar, etc...
No son patatas bravas porque tú lo dices.. las bravas originales son catalanas, por cierto, no madrileñas, os gusta apropiaros bien de todo. En levante las Bravas originales se sirven con alioli, y ahora vienes tú a decir que no son bravas... No son tus bravas, pero son las de 5 millones de españoles rey
