I made this for tonight's dinner. Thought I had sour cream but since I wanted to try it I used yogurt instead. It was so delicious anyway. Next time I will use sour cream. Thanks for a other wonderful recipe.

Half the group didn’t like the flavor of the sour cream’s flavor at Thanksgiving. For Christmas I substituted the same amount of Mexican Cream instead for the sour cream and everyone (same group) loved it.

I didn't make mine in the instant pot, but opted to just make it on top of the stove, for just me. ;) I wanted it with my meatloaf so used beef broth to make it and cut the recipe down using one C broth and one C elbows. Shredded some sharp cheddar and still threw in a handful of pre-shredded mozzarella. Decided next time, I'll not add any more salt or any pre-shredded cheese at all. It was a bit stringy from the pre-shredded, I'm guessing. It was pretty tasty. Oh, no matter how I ever make mac and cheese, even the boxed, I always add the sour cream too. Add to mashed potatoes too, it is yummy!
Sour cream really does make a world of difference.

Sorry about that not being clear! I use:
2 cups sharp cheddar cheese, 1 cup Swiss cheese, and 1/4 cup Parmesan cheese.

If you have one with an air fryer lid pour some extra cheese on top, don’t mix it in, and put the lid on top and cook for 3 minutes. Perfect crust

Hi Kristen! I’m excited to try your Mac and cheese recipe. My family likes Mac and cheese with a crispy top. Any suggestions on how to add to this recipe? Should I just follow your recipe and then put in a casserole dish, top with panko and put in the oven for a bit?
That would be exactly what I would suggest. I would place the completed mac and and cheese into a greased casserole dish. Then mix together a bit of melted butter with breadcrumbs and sprinkle over the top. Bake at 425 for 10 minutes or so.

With the cooking time is this factoring in preheat time? Just wondering because I made this and it was excellent but the noodles were a bit more cooked than my liking, I prefer a bit more al dente. It was a bit passed al dente if that's the correct texture that's fine but was just curious. Definitely will make again though. Thank you for sharing this recipe. Also made the baked ziti as well, that was wonderful as well.
I am so happy to hear you enjoyed! For the noodles, yes the cooking time does account for the preheating. You can certainly cook 1 minutes less if you want to try that. Just remember to allow for exactly 5 minutes of natural pressure release and then release any pressure.
Looking forward to this for dinner tonight. Question on the sour cream. I think you said 1/2 cup in the video but the printable recipe says 1/4 cup. Do you have a preference? Thank you.

I am making this right now except i have no sour cream. If it's bad ill blame me, if it's good ill blame you. Going to add philly cheese in place so uh.. Let's see how that goes.
LOL! Well, I think a bit of cream cheese will make it super creamy and super rich--the sour cream helps cut the richness and keeps it creamy. I hope you enjoy!
I never thought of using broth instead of water, that makes perfect sense though, Mac and cheese is so bland with only water
