It has been almost 5 years I moved from Chittagong to Virginia, US. I really miss those Chittagonian dishes. I NEVER had the same taste of kalabhuna and mezban at any Bangladeshi restaurants in the US. At the same time I've found some restaurants in Jackson Heights, NY who sell those types of foods, and their food taste is better than other Bangladeshi restaurants in the US. You went one of the best place to eat those dishes in Chittagong, and I'm feeling jealous of you @Brent.

Jaifal is nutmeg, jaitri is mace, dhania is coriander powder, chilli powder is Hathazari chilli which is less spicy but bright red in color. Bangladesh has very hot chillis also.

Mezban is a traditional Chittagonian feast presented 4 days after a death(Qul khani) along with prayer as well as on a death anniversary or any other occasion except wedding to feed a few thousand people - villagers, relatives, neighbours etc. and involves several number of cows to be slaughtered. The whole cow is divided into four parts- bones and three parts of meat. Meats from all parts of cow is divided again into three parts. The largest portion of good meats, some bones, liver etc. are for mezbani curry. A smaller portion of very tender meat is for kalabhuna which needs a special process and spices to give it an unique taste and black color. Rest of the bone containing meats are used for Chana daal curry. And last but not the least is the Nola which is a soupy curry of big marrow containing bone wrapped in slight meat and lots of gelatinous covering. All the dishes are different and taste differently. The video more or less explained every dish's cooking! Must be taken with morsels of plain rice, not polao or biriani.

I have to correct you on one thing: Bangladesh is in South Asia and NOT Southeast Asia. Oh yeah and the spice that the owner called "Dhoniya" is actually Corriander powder which is not indigenous to us but there is one spice in this dish that is indigenous to us and some other spices which are more widely consumed by us Bangladeshis than other nationalities

Besides Mezban (originally a Persian word that means host) meat, other dishes are Kala Bhuna (Black roasted meat) and Chana Daal (split chickpea lentils or gram lentils), and Nola (also known as paya or nihari made from bone marrow). I benefited tremendously as an amateur cook who likes to cook from scratch (without cheating by using ready-made spice mix). On a side note, I ran into you in Dhanmodi in June when I visited Dhaka. I tried to help you by talking to someone who spoke little English when you needed directions on your phone. I took you to the nearest mosque (Taqwa Masjid). Were they able to locate you and pick you up? I wondered. In any case, I am glad you are still in Bangladesh when your initial plan was to stay for 30 days. Surprisingly, mustard oil is banned in the US because it contains relatively high erucic acid, but cigarettes or liquors are not banned even though they contain nicotine and alcohol!

You can go sylhet Bangladesh also, i think there is something like mezban, they have also some special food recipes. you can go pach Vai restaurant or panshi restaurant there is food also so good.

You can go sylhet Bangladesh also, i think there is something like mezban, they have also some special food recipes. you can go pach Vai restaurant or panshi restaurant there is food also so good.
