    Omgosh that's so funny...we had Chinese buffet Thursday. I always start with egg drop soup and sushi before I go get a full plate of Chinese lol. Joe always goes straight for the buffet, the coconut shrimp is his favorite. Great video as usual!

    We have made those 2 ingredient bagels many times , with self rising flour in the air fryer , we love them !

    Happy Sunday 😁... So glad you got your Chinese food out at an actual restaurant. That Italian pasta bake looked delicious. We love Italian food. My husband and his family are Italian. His dad and his side are 100% Italian. I miss his grandmother's cooking. She passed away a few months after we got married. Have a great week.🌼

    If you like tofu and want to try it differently, you can freeze a block of firm tofu, then let it defrost, then gently squeeze out the water with your hands (flatten between palms). Slice it and use it in stir fries (fry it in pan with little oil first before adding other ingredients) or air fry with seasonings to get very crispy. The texture becomes a bit meatier, more bite to it and it absorbs a lot more of the seasoning. If you like salads, can also try cold tofu salad which basically is drained/pressed cold firm tofu crumbled up and mixed with lightly cooked green beans/edamame beans, julienned carrots, grounded sesame seeds, soy sauce, sugar, miso paste.

Sadly, whenever I get a block, I have to eat the entire thing myself because it's just not something Tim enjoys, but I really like it, if it the flavor or marinade is good. I did like the air fryer method and thought it got nicely crispy in there, so I will try that again. I really like the sound of the cold tofu salad, though I've never seen that nor tasted it, but I like all of those ingredients, so I'm sure the finished product is delicious, thanks so much! We are getting some sun the next 2 days, and, we're off, so we'll be outside soaking it up 🌞 We just got back from camping 🏕. I'll be posting two videos in the next few weeks. It's difficult for us to get anything cold or frozen from Trader Joe's, because the closest one to us is 3.5 hours, one way! So we usually try to hit one when we are on vacation, on the way home, and if we have a cooler in the car, LOL! I am jealous that you have one closer and can just "make a run to Trader Joe's" for stuff, must be awesome! I continue to love and use ours on a regular basis, especially in the summer (to keep from turning on my big oven).     Love all the meals Stacy! It's always nice treating yourself to a charcuterie board although I try not to do it to often now because Les has to watch his fat intake. Your pasta bake looked delicious! I love a cheese omelette for breakfast. They remind me of my Mum because she often made them for us for breakfast when we were kids.       @superbellabeau - Hey Sally!! Thank you so much for stopping by and watching! I love charcuterie, but as you said, it tends to be loaded with cholesterol and fat, so I don't do it often either. Of course, most of Tim's diet is loaded with all the wrong stuff, but he's as healthy as can be, so far. All of the exercise he gets playing golf is hopefully counteracting some of his diet, LOL!! Awww, I love how your mum made you cheese omelettes for breakfast, so sweet! I think food related memories are some of the best memories!!       @Debbie Reilly - Ooh, a fellow tofu fan! I don't just love it, but I do like it, and like to experiment with different flavors and marinades. How do you fix yours when you bake it in the oven? The first couple of times I purchased a block (for me) and fixed it, I did oven bake, but I really like using the air fryer :) Take care and have a wonderful and truly blessed day ---Stacy 😍💚

      When I bake my tofu I mix olive oil and garlic and Italian seasoning, salt and pepper and a few red pepper flakes mix well brush on the tofu (I leave tofu whole).bake in 375 oven until brown and crispy 30 -35 minutes add marinade sauce and mozzarella cheese, I call it tofu parmigiana, I use spaghetti squash like pasta soooooo good. Nice salad dinner is served. If you try this Stacey let me know how you liked. 🤗😊🥰

      @@debbiereilly900 - thank you for the great info Debbie! I have only tried tofu a few times and only in an asian type meal. I've never though to use more italian flavors, but it sounds really good! So you layer the tofu with the cooked spaghetti squash? Yum!!

The bagels were not like the traditional ones I buy in the grocery, but they were still quite tasty and we both enjoyed them. It was a fun experiment and I would totally try them again :) I am sort of happy and sad at the same time - glad to know it's not just my Walmart that no longer seems to have that bruschetta mixture, but so sad that I can't find another jar.     I make these all the time I also add fruit like blue berries etc I round mine into a ball and poke my thumb in the middle and rotate it around until it forms donut shape and air fry them for about 6 minutes 2 t a time been making these from weight watcher recipe for years. They freeze well up to a month tooi.

    Hi Stacy!! Sorry I have been MIA. Been at the lake with not so great weather! 😂 I am making your ice box cake because I cannot find my great grandmother’s recipe the other half of it so I’m mixing your eclair ice box and part of the recipe i have! :) Any tips for your recipe are welcome! It’s for my Grandmother’s birthday! So glad you and Tim are well! We have been playing a lot of tennis in the 90 degree heat because we are crazy and savoring every warm ray before winter! Maybe it's smarter to watch when you are less likely to eat, sort of like not going to the grocery store hungry?! Haha! I was looking at a recipe the other day that called for goat cheese crumbles (though for the life of me, I can't remember what it is at the moment). I love goat cheese, but Tim is not as much of a fan. I don't know if it's meant more to eat cold or crumble on top as opposed to cooking with it. It's an ingredient I enjoy but rarely cook with.     Hi Stacey! It all looked good. We do charcuterie for dinner sometimes! Mostly just meat cheese and crackers. Sometimes we even do appetizers for dinner!

I love charcuterie and would love to do it more often, or do an appetizer and dessert kind of meal, but that's a hard sell for my better half.     We sometimes need to eat in shifts as well, especially this time of year. So much to do and while I love our little home, the sun blasts through the windows in the kitchen as I am cooking. Our cottage is pretty much like a little greenhouse. Very airy and sunny, but inconvenient when the sun is so direct. Like you, I try to prep things as best I can ahead of time. Still, there are times my husband is ready to eat and due to the sun and just feeling warm, I prefer to wait until the sun has dipped behind the hillside/trees before eating my meal on really warm days. A long-winded way of saying that I more than understand eating mostly the same things, but at different times, ha! ha! Very glad you had the opportunity to eat out. It's a lovely treat, especially when one spends so much time in the kitchen. Thanks for a great video and take good care.

    Some fun menu ideas this week! Ooh I have some hamburger buns leftover from grilling the other day, now I'm thinking I should try some sloppy joes to use them up. And I have cotija too so I can make the street corn salad :) I think Italian or pasta dishes are good any time of the year, yours looks really good. I usually halve my recipe like that too and we still have it for at least 2 meals for just the 2 of us! I'm still not sure I could be on board with tofu. In the air fryer is a good idea, but I'm betting Don won't eat it! I love charcuterie at our house, but I like it more than Don! Eating out, yum......and fun to try bagels, they look good! Thanks for the good ideas.

Tim loves a sloppy joe, so it's always a quick and easy no-brainer kind of meal for me to make, to use up leftover hamburger buns. Around here, I also do crockpot maple bbq chicken or chicken caesar, or you could do turkey burgers or chicken ranch burgers to use them up. Or freeze them! Definitely make some street corn salad, glad you found the cotija, it can be hit or miss here. Try the bagels sometime, but skip the tofu (Tim won't touch it at all), LOL!     I love Chinese but in our small town we have 2 restaurants and both are NASTY. So I seldom get Chinese. My favorite Chinese Restaurant is probably 30 miles away. It's on the south side of Louisville. It is not too far from my daughter's new in laws home so several times I have had her pick up take out for me. I have had a rough weekend. It has gotten really hot here and the heat just drains me. We met my best friend for a late lunch/early dinner at Olive Garden on Friday. I brought home most of my dinner. By the time we all shared an appetizer, then had salad I had a large portion of my dinner left. We got Mark a $5 Spaghetti and meat sauce dinner and we had leftovers last night. I just got home from going to the grocery. Since I was out anyway I picked us up a burrito at the little take out place next door to the grocery. So I have not cooked at all this weekend. We seldom do that so I do not feel bad in the least. In the summer when I do a baked type pasta I do what I call a Fake Bake. I mix the sauce with the pasta, then add dollops of the ricotta in to the skillet. I then top with the cheese and place a lid on top to melt everything good. I seldom use my oven ever. I have a large counter top oven, convection oven, air fryer that has several other features. I only use it. I only use my big oven a couple times a year. I use it for the Thanksgiving Turkey or when we smoke meat on the smoker. I triple wrap it and bake at 225 for several hours to tender it up. Otherwise I do not turn on my oven. We have central air but it still heats the house up too much for me. Your dinners all looked good. I got easy things to cook this week. We are going to make mini barbecued meatloaves this week and we are going to have BLT sandwiches one night. I also got the butt portion of a spiral ham that I plan to bake that we can eat on several times this week. Thanks for sharing. Have a good week.

    Just needs a bit of cream cheese for those delicious looking bagels. I like a little Chinese food at times but my BF has never tasted it and probably never will. We are about 1 1/2 hrs from a restaurant. I did see Tim had some Crab Rangoon my favorite. Everything looks delicious ( except sushi) lol 😂😆.

    I love sushi and my partner doesn’t. I would be just as excited as you were. Luckily living in Los Angeles there are plenty of sushi restaurants to get take out from or enjoy with friends. Bagels are hard to make, luckily they are readily available around me. I do like to heat up bagels in the air fryer though, when you get them fresh from the deli and they are a day old with a spritz of water. Thanks for a great video!

I'm not overly adventurous with sushi, but I do like a few of them, and this local place actually has pretty good sushi (at least to my inexperienced palate, as compared to other places I've tried). We don't have very many bakeries where we live and not really a good place for bagels. I had never tried to make any, so this was a fun experiment to try... probably not even close to authentic but still fun to make and eat!!
