SUMMER IS HERE~ CANNiNG STRAWBERRY RHUBARB JAM

  • Summer is here and is time for the canning season to begin. The first sign of summer is rhubarb and making rhubarb crisp and strawberry rhubarb jam.
    My family absolutely loves anything that you make with fresh rhubarb, especially the strawberry rhubarb jam that we can eat all winter long until next season and make more. We love to slather it on homemade bread that’s been toasted with lots of butter.
    It’s so easy to make your own jam if you have pectin, sugar, and the fruit it’s Eazy Peezy lemon squeezy
    Strawberry Rhubarb Jam Recipe:
    Ingredients:
    2 1/2 half to 3 cups of chopped rhubarb
    2 1/2 half to 3 cups of chopped strawberries
    10 cups of white sugar
    8 1/2 tablespoons of pectin
    8 tablespoons of lemon juice
    Directions:
    1. Prepare your fruit and you’re gonna add the fruit and the lemon juice into a pot and simmer on low for about five minutes.
    2. Add the fruit and stir the fruit and it still boils.
    3. Next, add your sugar and cook on medium heat until you get a rolling boil, once you get the rolling boil set your timer for one minute making sure to stir the entire time.
    4. Poor hot into cleaned jars, making sure to wipe off the rims then add your seals and lids and process in a water bath for 10 minutes. Making sure the water is boiling.
    5. Remove from the water and let’s cool on the counter. Do not check to see if your seals have actually sealed you will hear them and then wait till they completely cool if you notice they haven’t either put it in the fridge or use it right away or you can re-process it again it will not ruin the jam.

    I'm willing to bet that the ones that think you're too controlling are possibly parents that DO NOT make their children mind, and are part of the reason that a lot of children are so horribly behaved nowadays lol. You're a good mom that has a happy family. You're never going to please everyone. You keep doing you. LOVE your videos and can't wait for your cookbook!

    Rhubarb freezes really well. I dice mine and freeze it in quart bags. My dad lot loves a rhubarb pie with raisins. My great grandmother taught me to make jam. All we do it is melt paraffin wax and pour a 1/4 in layer on your jam after it set. Put the lids on and it stays good for a few years.

    Rhubarb bread is delicious. My brother didn't care for Rhubarb but, he loved Rhubarb bread wrm from the oven.

    I remember as a little girl in MN. we had rhubarb growing in our yard, mom would give us a little dixie cup of sugar and we would dip the rhubarb into the sugar it was so yummy lol

    My nana used to grow rhubarb and i remember all us grandkids used to go out with a small cup of sugar and grab the rhubarb and dip it straight into the sugar and just munch away. It was healthy but unhealthy 😂😂😂😂. I miss doing that😢

    I’ve heard the leaves are very poisonous. I’ve seen other ppl on you tube leave the leaves outside. Not sure if it’s true… that’s just what they say 🤷🏻‍♀️

      They are only poisonous to eat (as far as I know. Source: I had a big rhubarb patch in my childhood garden). I think people generally leave them outside not because they are poisonous, but because most kitchens don’t have such a generous amount of counter space! 😂 For some it might also be a pet hazard. 🤷🏻‍♀️

      rhubarb leaves contain oxalic acid, yes! Poisonous do not consume.

      They are if consumed. But they make great fertilizer in the garden and also keeps pests away!

    Just wanted to share that a few years ago I discovered Pomona's Pection. It uses a calcium water with the pectin and it allowing you to use a lot less sugar or even honey.
    My family loves rhubarb as well, with strawberry rhubarb being one of our favorites!

    No pancake syrup for us. My kids will only eat buttermilk pancakes with homemade strawberry rhubarb jam (or 100% maple syrup if we run out).

    I wish one day you would tell use where you get some of your great kitchen gadgets!!! Spoon that attaches on the side of the pot. Where do you get it? Blender?     It's good..but not many people go crazy over it..super sour..an acquired taste. My mom use to make pie with strawberry and rhubarb sauce...bet the jam is good....
