    I am a Bangladeshi and I also work in a restaurant. And I am very proud to see a Bangladeshi Indian restaurant chef is coming out and shearing everything to the world.

    A few of my locals sell this leg of lamb and its called Kursi Lamb.. you get 4 sides of rice and 2 sauces (strength to taste). Its decorated with eggs, rice and onions, there are no potatos or carrots. Please see this local menu, its £60 eat in and £45 takeaway.     Great effort. Thank you. It is quite a process, I have the recipe down below.
    Latif Inspired Leg of Lamb Middle Eastern/Persian/Afghan style
    Recipe:.
    Add half cup of vegetable oil in a pan big enough for the leg of lamb. score the leg of lamb
    Add 4 bay leaves, 5 sticks of cinnamon, 8 crushed cardamoms
    add 3 liters of water, Ginger and Garlic paste, add 2 cups of onions
    add 3 teaspoonfuls of turmeric powder
    boil the leg of lamb covered 1 hour each side total of 2 hours
    reduce the lamb stock into a thick gravy
    Remove leg of lamb after 2 hours from the gravy/stock
    Add 1 cup of tomato puree and 1/2 cup of butter into the lamb gravy/stock
    reduce the gravy/stock for another 30 minutes until the oil rises and separates
    Skim off some of the oil which has risen to the top into a frying pan
    Add julienne carrots 2 tsp of crushed ginger 2 tsp of fennel seeds, 2 tsp of cumin seeds (shali jeera)
    Cook the carrots until it is caramelized under high heat stirring while cooking
    Add 2 tablespoons of Garam Marsala and 1 1/2 tsp of salt, 1 tablespoonful of pure ghee into the carrots
    Lower the heat
    Add raisins and cashews (allergy warning!) cook for a few minutes while stirring.
    Measure 3 1/2 cups of Basmati rice wash and soak for 1/2 hour
    Cook the rice for 7 to 8 minutes so it is 60% - 70% cooked
    Keep aside
    In another pan add water oil halved red potatoes and chopped carrots and boil until cooked.
    In yet another pan add 5 tablespoons of ghee on medium heat
    Add the leg of lamb into the simmering ghee
    Add boiled potatoes and carrots with the leg of lamb
    Cook the leg of lamb carrots, potatoes in the ghee for 15 minutes each side covered slightly browning
    the leg of lamb.
    Roast 8 whole tomatoes halved onions and 8 garlic cloves in a tan-door (or some other way)
    Fry a handful of red dried chilies in oil (does not show how this used, probably as a garnish)
    Add two tbl spoons of ghee to an tall empty pan on low heat, add sliced potatoes, add half of the the half cooked rice
    Add boiled carrots and potatoes that were cooked with the leg of lamb over the rice
    Add the leg of lamb over the carrots and potatoes
    Add the gravy/stock over the leg of lamb
    Add the remaining rice over the lamb and gravy/stock.
    Add green peas
    Add caramelized carrots raisins cashews mixture over the rice
    Cook the lamb and rice in an oven for 20 -30 minutes (temperature not known)
    Serve the rice in a serving dish add the leg of lamb over the rice
    Separate the meat from the bone while on the rice
    (this may be done before placing the leg of lamb on the rice and adding the lamb pieces on top of the rice)
    What happened to the roasted tomatoes and garlic and fried red chilies? Not shown on the video.
    Maybe it is a garnish.

    Why didn't you just marinade it in tandoori spices and yoghurt just like you make lamb tikka? And stick in the oven for 3-4 hours! You fucked right up. I've made hundreds of lamb legs in the restaurant. By the way I am bengali and from Jogannatpur!!
