    红葱头 4个

    胡萝卜 一小块
    香菇 2个
    香菜 一小颗
    老豆腐 500克
    生粉 适量
    油(炸) 适量
    蚝油 1大勺
    生抽 1大勺
    糖 1小勺
    老抽 1小勺
    水淀粉 适量
    油 1小勺+1小勺
    ingredients :
    carp fish 1.5 pounds
    white pepper powder 1/8 tsp
    cooking wine 1 tbsp
    salt 1/4 tsp + 1/4 tsp
    sesame oil 1/2 tsp + 1 tsp
    ginger a small part
    garlic 5 cloves
    shallot 4 pieces
    green onion 2 stalks
    carrots a small part
    shiitake mushroom 2 pieces
    cilantro a little bit
    firm tofu 500 g
    potato starch as desired amount
    oil for fry as desired amount
    oyster sauce 1 tbsp
    soy sauce 1 tbsp
    sugar 1 tsp
    dark soy sauce 1 tsp
    starch water as desired amount
    cooking oil 1 tsp + 1 tsp

    You use potato starch to fry the fish but you use corn starch to fry the chicken. Is there a reason for that ?
