That's because there's an insane amount of crappy mediocre AMVs on youtube done by people who don't know how to make a good AMV. It's understandable that you saw a bunch of crappy ones before seeing a few good ones.

I love this song :) I'm strangely addicted to Infected Mushroom..and incidentally I'm also addicted to Soul Eater. It goes hand in hand. (Little annoying comment here: SoMa is the best pairing, hands down)
