If anyone needs it, I've typed out the recipe here :) Aloo Gobi Ingredients 550 gm/1.2 lb cauliflower (after chopping) 400 gm/ 1lb small Yukon gold potatoes, cut in half 165 gm/1 medium to large red onion 25 gm/ 2 inch length ginger, roughly chopped 17 gm/ 12 small garlic cloves 1 green chilli or jalapeño, thickly sliced 1 large tomato, cut into wedges 1 teaspoon turmeric powder (haldi) 1 teaspoon chilli powder 1 teaspoon heaped ground coriander 1/2 teaspoon cumin seeds(jeera) 1 teaspoon Garam Masala 1/3 rd cup frozen or fresh green peas Chopped cilantro (for garnish) Directions -Add potatoes to boiling water, and cook for 4-5 minutes. Add the cauliflower florets and cook for another 4 minutes. Drain, setting aside 1c of the water for gravy. -Add 2T oil to a pan. Once it is hot, add the blanched veggies, and fry until they are a little brown around the edges. Move to a plate and set aside. -Add 1 additional teaspoon of oil to the pan, and fry the onions until transparent. Add the chopped ginger, garlic cloves, and ½ of the sliced jalapeno. Stir to combine, and then add the tomato wedges and a pinch of salt. Stir, then cover on medium-high heat for 3-4 minutes. -Remove the vegetables from the heat and add to a blender. Add ¼ cup + 2T of water, and blend until smooth. -Make the spice paste: add turmeric, chilli powder, and coriander to a bowl, and mix with ¼ c of water. -In a clean pan, heat 1T of oil, and then add the cumin seeds. Once the seeds are fragrant, turn the heat to low, and add the spice paste. Stir, then add the vegetable paste and a pinch or two of sugar. Rinse the blender jar with a little bit of water, and add that to the pan as well. Cover, and cook on medium heat for 5 minutes. -Add the cauliflower, potatoes, and other half of the jalapeno. Also add salt to taste. Stir to combine, and then add the 1c of reserved water from blanching the vegetables. Bring to a boil, and then add the garam masala. Stir. Cover on medium heat for 8-10 minutes. -After 8 minutes, check if the potatoes are soft. If so, add the thawed frozen peas (if you are using fresh peas, add them with the potatoes). -Add the coriander, stir, and serve with rice or roti!

This was surprisingly good, there’s a definite advantage in blanching and frying the cauliflower and potatoes first as they retain their integrity. I did use ghee instead of oil but other than this followed exactly. Will use the recipe again for sure! Many thanks 😃

I made this a few days ago. Quite easy but needs time to prepare and cook. I blanched the tomato in boiling water to remove the skin. Rather than putting the tomato/garlic/ginger paste in a blender, I used a stick blender and pureed it in the pan itself, so kinda saves a step. Yummy! Going to have it with Bazlema, a Turkish flatbread, the recipe I got from YT too. Thanks Bumbi.

I gave this a try just now Bumbi. The cauliflower rather disappeared by the end, I think I blanched them for too long! I have never seen aloo gobi without fenugreek leaves I will try this recipe. I love all your vegan recipes. I would love you to do a chana masala recipe with sour mango and pomegranate powders.
You can definitely add fenugreek leaves if you choose to. As I always say take my recipe just as a guide and put your own twist in it 😀. I already have a Chana Masala recipe on my channel. Also I hope one day U may do a chana masala powder from scratch those mixes I get from the store are way too chilli for me to use. Can u suggest how I could mix a spice paste or powder mix as I do have pomegranate and anchor seperate normally I do coriander cumin garam masala amchoor and pomegranate but I think the ratios are a bit off. For the time being you can follow this recipe for making chana masala- 1/2 tsp (teaspoon) carom seeds (ajwain) 2 tbsp(tablespoon) dried pomegranate seeds or 1 tbsp powder 1 tsp kasoori methi (dried fenugreek leaves) 3 tbsp coriander seeds 1 black cardamom 2 & 1/2 tsp black peppercorns 4 one inch length cinnamon stick 8 cloves 2 tablespoons cumin seeds (jeera) 4 to 5 bay leaves 1 tsp black salt (optional ) 1 teaspoon amchur (dried mango powder) 1/2 teaspoon dried ground ginger Roast the whole spices on very low heat till they are fragrant. Grind to a fine powder using a spice/coffee grinder once they cool down. Mix with amchur powder and ground ginger. Store in an air tight jar and keep in fridge. I do not add red chillies as I add red chili powder when cooking. In that way I’m in full control of the heat level. Hope this helps.
