  • This Paratha is made in combination of Broccoli, Paneer and Carrots. This healthy paratha recipe is perfect for Breakfast, lunch and even for dinner. A great lunch box option for kids and office going persons.
    Broccoli Paneer Paratha | How to make Broccoli Paratha | Easy & Healthy Paratha Recipe | Lunch box Recipes
    Ingredients:
    For Dough:
    • Whole wheat flour - 2 cups
    • Gram flour (Besan) - 3 tbsp
    • Carom seeds - 1 tsp
    • Oil - 4 to 5 tbsp
    • Salt to taste
    • Water to knead
    • Ghee to roast
    For Stuffing:
    • Broccoli - 1 medium grated
    • Carrot - 1 medium grated
    • Paneer - 150 gms
    • Onions - 1 cup
    • Green chilies - 2
    • Cumin seeds - 1 tsp
    • Coriander seeds - 1 tsp
    • Asafoetida - ½ tsp
    • Turmeric power - ½ tsp
    • Red chili powder - 1 tsp
    • Dry mango powder - 1 tsp
    • Salt to taste
    Recipe -
    Dough:
    1. In a mixing bowl add all ingredient and knead a semi soft dough by adding little water at a time.
    2. Cover and let it rest for 10 minutes.
    Stuffing:
    1. Heat a pan add some oil and add cumin seeds, coriander seeds, chopped green chilies and hing powder. Sauté for about half minute.
    2. Add onions and cook till they get translucent. Add all spices and roast for about a minute.
    3. Add grated carrot, broccoli & salt and mix well.
    4. Sprinkle some water for fast cooking, cook for 3-4 minutes. Switch off the flame.
    5. Add grated paneer and mix well. Let it cool down completely before stuff into parathas.
    Assembling:
    1. Take small ball size dough and roll into a small flatbread. Add 2-3 tsp of stuffing. Begin to pleat the edges. Then bring them together at the center and press them at the center.
    2. Flatten it and take extra dough out if any. Roll it again into a ball.
    3. Dust some flour and roll it into round shape flatbread.
    4. Heat a pan and add some ghee. Place the paratha over it. Flip and apply some ghee and cook from both sides until done.
    5. Serve hot with curd or mint chutney!

    Health bhi, Taste bhi... ! Just a suggestion, The less we cook Broccoli before eating, the more crunchy texture and less smelly it becomes. So we can add the broccoli in the mixture after its cooked up. The roasting with Atta will eventually cook the broccoli later !
