Paneer Paratha is a perfect special breakfast recipe for winters, which is also my personal favourite nashta item. Preparing this recipe is nostalgic for me as it brings back memories of my college days.
What is your favourite memory associated with parathas? For me, it has to be those surprise lunch box visits from paneer parathas, occasionally! Paneer Parathas are perfect for a pick-me-up breakfast or lunch or dinner, especially during winters. So what are you waiting for? Let's get started with this Kunal Kapur Style recipe. (:

(Paneer Paratha)
Makes 4
INGREDIENTS
For making paneer
Milk (full fat) - 1lt
Lemon juice - 4tbsp
Muslin cloth -
For the dough:
Whole Wheat Flour - 2cups
Salt - a generous pinch
Water - as required
For Stuffing:
Paneer (grated) - 2cups
Onion (finely chopped) - 2tbsp
Green chilli (chopped) - 1no
Coriander seeds (pounded) - 1 ½ tbsp
Salt
Ginger chopped
Coriander seeds
Cumin - 1tsp
Ginger chopped)
Anardana (pounded) - 1tbsp
Chilli Powder - 1tsp
Salt - to taste
Garam Masala - ¼ tsp

आज आपके वीडियो को देखकर मैंने भी पनीर पराठा बनाना सिखा है। पनीर बनाना भी आपकी वीडियो देखकर ही सीखा है। यह एक बहुत अच्छा अनुभव था। हमारे घर में आज पहली बार पनीर संबंधित कोई रेसिपी बनी है।
In front of my school, there was a very little shop of kachori and Parathas. I can still remember that taste of the parathas. I used to take lunch from home. If I ever had the opportunity to eat alu paratha and chutney in that shop, I would have felt very lucky that day. I can't forget the taste of that chutney (tomato and garlic).

Everything about this paratha, starting from amount of stuffing used in them, way of rolling them, the way they inflated, and the evenness of the stuffing after rolling was perfect !

When I was job seeker. In Bangalore we were used to go "Ande ka Funda" it was small kitchen and there were some delicious parathas we used to eat like Aaloo,Onion, Gobi, Paneer and Anda paratha with Dahi and Achar..
Those days were awesome..
Now we have more than to eat but that... hunger is not there...

I tried your recepie and it came out really nice.
My memory of paratha goes to my mom making jain stuff paratha out of boiled kacha kela adding dhaniya, nimbu, garam masala, salt, adrak and green chilli paste, dhaniya powder and haldi. She mostly adds all the stuffing while making the dough of wheat flour. So we don't have to stuff the paratha seperately. But they are yummy and we have it with curd and green chutney..
Also, if you you can do a video on jain recepie with or without green veges. We have our religious festival of 8 days where we avoid all kind of vegetables. It will be very helpful if you can help us on those lines..
Also to add, I am a new cook and you have saved me from embarrassing situations so many times. I try all the new stuff watching your videos and me and my husband love them..

For me when i was in college i.e after complete busy schedule in vacation i use to go my friends house in winter time his mom make paneer paratha and satoo ke paratha garma garam specially for me and with some spicy chatney and curd ❣ , Now i really missing those days ... that group, my hometown, and now whatever i learn from chef kunal nd sanjeev sir your both are my cooking gurus . Chef I have tried all your paneer recipes starting from karahi paneer to shahi paneer. You techniques are so straightforward and easy to follow that it doesnt become a chore and we can enjoy cooking. The ingredients you use are not too much or too little and most things can literally be found in the home itself

Thank you chef!! For sharing such wonderful and healthy recipe . For tiffin purpose for me it's best . Chef , if we don't have paneer may we use chhena ? In the area where I live anardana is not always available so instead of it what may I use?? I can't chop ginger so fine like you so may I just add paste of it ?
