- Deep Fried Hot Water Cornbread Fritters
1-1/2 cups Yellow or White Cornmeal
1/2 cup All Purpose Flour
1 teaspoon Baking Powder
1 teaspoon Salt
2 cups Boiling Water
Place water in a saucepan and bring to boil. Meanwhile place the cornmeal, flour, baking powder and salt into a heat proof bowl and whisk together. Pour the boiling water into the mixture while stirring it together. Let sit a few minutes to cook the cornmeal and cool a bit. Heat cooking oil in a deep-frying pan on medium heat. Once hot use a scooper to place several at a time. You will know the oil is hot enough when the dough begins to fry immediately after being put into the oil. Let fry 3 to 4 minutes and stir or flip them if needed. Let fry another couple of minutes. Fry 5 to 6 minutes all together to ensure the inside of the fritters are done. Drain on a rack and serve while nice and warm.

I had to laugh when you mentioned the baker's hands Amy.
I can hardly feel the tips of my fingers anymore! Sometimes it helps in prepping. There just doesn't seem a way to avoid this, it happens.
TFS. You fried these up to perfection, not a single overcooked or burned fritter. The crunch is so appetizing......... nothing worse than soggy fritters.

Hot water also brings out the flavors before frying. Try adding onions bits and a little garlic in with the dry ingredients. Turns out delicious.

Where do you put the leftover frying oil from making the hot water cornbread ? There 's an awful lot in the pot for frying.
