    THE most under appreciated job in the world, right next to garbage man, is the offshore chef/cook. I was priveleged enough to work for a few offshore platforms, and in the mountains of Colorado. Some crews always tried to show some form of appreciation, but for the most part, didn't matter how you cooked, you were looked down on and treated as third class. Good to see this uplifting vid. I was honored to work for companies like BP, Shell, and some others... and didn't have to put up with alot of negativity, like others I've seen... but it's a rough, intense difficult job, and the pay is usually no better than Walmart.

      I can definitely understand that. I work at a very remote mine site (roughly 500kms to the nearest town with more than 1000 people), so a fairly similar situation. I try not to complain because I know how little the chef is payed and I also know what an absolute pittance they are allocated for ingredients per person per day, but at the same time it is very hard for me to show any appreciation when the food is so terrible. End of the day those big catering companies like Sodexo/ISS etc are ruthless, and unfortunately a lot of mining/resource companies will just pay whatever is cheapest when it comes to workers food/accomodation costs.

    That chef is a REAL chef. Fat, jolly, friendly, doesn't insult his workers. Seems like a real nice guy that I'd love to have a drink with and discuss dishes.

    thanks for sharing, i worked for 15 years onboard passenger cruiseships, i always wondered how different cargo ship's food was. I can tell you this, back in the 90s, cruiseship food was FANTASTIC, when only upper middle class were able to travel, there was enough money to have Italian cooks for the crew. I can honestly say, what Princess Cruises serves now to their passengers is not as good as the food we use to eat as crew members, it was that good, we used to complain, imagine that, how naive and stupid we were.

      Like most things in life you raise yourself or lower yourself or your standards to the status quo. Status quo is the majority in any segment of life. You get more "poor people" in this case and you lower your standards to theirs. It is just normal to them and they see no difference. By the way, poor people do not go on cruises. They are simply less well off than rich people. Like in schools, integration caused a tremendous downgrade to the public school system in the US. The public schools had to lower their standards in order to socially promote the retards from the shall we say less intelligent sections of town.

      Jeff Stanley the reason why schools downgraded is because s soon as integration happens, rich people move away and take all the resources away fucking up everything. Then you get bum ass teachers who are only there for a check instead of education. The reason education is a failure in the us is because we fail the educators and educated.

      How can he know the food is good if you don’t taste it? It seems actually impossible to cook properly. Literally every cooking class, from the community center to le cordon bleu will tell you how important tasting the food is.

    I have watched this multiple times over the years- both for my love of food & cooking, and ships... i would love to take a Cargo Ship trip, I just don't really see it happening in my life ... but honestly those meals looked great... those mushrooms, that "cheesy pasta", the rolls & bread, even the breakfast pizza.. looked more like a Cruise ship food lol. Awesome... thanks & take care.

    The hardest job on the ship I’m a Chief Cook been going to sea for 42 years. As we say there’s 30 chefs on the ship and they put the worse 1 in the galley I sometimes have to feed up to 600 with my chefs our allowance is £3.92 per person per day 😱👨‍🍳👨‍🍳

      I can only imagine what that's like... I'm an American but try to keep up with our Brothers & Sisters in the UK, and there was an outstanding documentary about HMS Turbulent, a nuclear submarine, and they allowed that SouperDouchebag chef Heston Blumenthal try to revamp their food program... and the CO & XO had to explain to them, the 2-Pound-ish price per person wasn't per MEAL, it was PER DAY, and it was literally less money than the government allocated per PRISONER food per day... and oh yeah, the Submarine food is supposed to be both the Best. and the MOST. So you must have a hard job, much respect from a regular drunken Yank bro.

    As a seafarer this is not what happens on all vessels, very dependant on size, company and if there are any guests on board or not.

    Well lets say that eating on a cargo ship is most of the time bad (im a deck officer) but last contract for 2 months i had an amazing chef who transformed all the food in something delicious. It's skill and passion that makes the difference.

      That's OK if you're on "dayjob" while at sea 'cause you get an extra hour's sleep, but if you do watches the extra hour gets divided by 3 and you do 20 minutes extra per watch. When you "advance clocks" it's the other way round.

      I think things varies a bit, but on the ships i have been on you go after the ships clock so it ain't affected over different time zones.

    The table you described as where the Captain and various ship's officers would eat would be called the Officer's table or the Captain's table. I made a faux pas by sitting in the crew's mess to eat, when, unbeknownst to me, I was supposed to be at the officer's table. I was fine where I was, but when the waiter told me for the third time that if I sat "over there", he would be happy to serve me. After the third time (I'm dense) I realized that I wasn't so much being invited as instructed. The food was more Western than the African food the crew was served. I didn't actually care as I had missed the first two meals that day due to timing issues and travel.

    I went to sea on a French cable layer converted to a PSV, the Isle de Batz. Man they even baked cakes in the galley along with buns fresh every day. The food was awesome, top French cuisine.

    That was very interesting and informative. Those meals were making my mouth water. I think the work would be hard and it makes sense for them to feed the workers well. That was not what I was thinking they would be feeding the workers, I was thinking more like a military mess hall but wow, I want to go work on ne of those ships now lol...       In a Shorebased 4star joint, you'd pay a weeks wages for food like this, yumtious, lucky guys on this ship. I've eaten 'Shipboard on the Scottish Ben Line Steamers (Some years ago) great tucker, wholesome and delicious.

    I've done 3 trans Atlantic cruises, though not on a cargo ship. For some reason being at sea for so long you really look forward to your meals a lot more than you do on land.

    I have been working on a Dutch cargo vessel. Only $3.80 a day to feed a hard working sailor. Within 6 months I lost 15kg of weight. No bottled drinking water nor juice or soda available. Because I am no slave, I quit.

    Great video, & I love that you added the extra info towards the end, being that Hugh is vegetarian.... I'm about 4 months into being newly vegan, and 100% vegetarian so i found that to be my fav part about the video!!!

      I've had an up and down relationship with Kashrut, I no longer keep any form of kosher really. Just avoid eating pork.
      It's something is would like to do in the future, when my life is more stable!.

    I worked onboard a dredge one summer. Talk about GREAT food! Had a wonderful cajaun chef! Every other Thursday was steak, or seafood dinner - all you can eat. Odd how the safety inspectors always showed up on Thursday's at lunch time. LOL!

    I always felt a little bad for the galley staff when I was at sea. We would land up somewhere cool, go ashore but they had to go back to the ship to work at mid afternoon to work on the evening meal.

    I do volunteer work driving seafarers from the cargo ships (coal, bauxite, alumina etc.) and I guarantee that they never eat as well as you did in this video. I congratulate you on the ship owners for actually providing good quality food and someone who can cook it properly.

      They usually serve meals and snacks in between meals because the workers have shifts around the clock. So the pizza is actually a really thoughtful gesture for a worker who might be having his dinner during breakfast hours and not in the mood for donuts. No need to be ignorant.

    Worked on a Ukrainen crewed ship where a couple times we had fish heads with onion & garlic for breakfast,the food was absolutely shocking on that vessel,think they were feeding them for less than 40p a day,but the cook & all the crew were the nicest people you could meet,shared everything.

You are assuming the bread that thousands of bakers across all of the US make is similar and that there aren’t thousands of differing types of bread. I’ve had complete crap bread and some bread that is to die for in the US as I’m sure you can find in any other country

    Excuse me mate, but the fat job is not a chef, he is a cook! That is a ship not Hotel Astoria! I would gladly eat pizza for breaky but not pizza AND doughnuts! In all the years I was a merchant marine I never saw pizza on a ship's menu! The menu was usually made by the chief steward who was the boss of the cook!

    Donuts and pizza for breakfast that's the meal of champions right there, but honestly that's probably a great high sugar high calorie high protein meal for the crew to get them through the morning without them going hungry before lunch, in my job you have to pack a large lunch even for a 8 hour day, you just sweat and burn through the calories so quickly that you gotta have something with a lot of sugar protein salt and carbs

    I have worked for 35 years in hotels and catering, I first trained as a chef then went back and did management, you have a cook on board not a chef, cacky pasta and pizza is no way representative of Italian food.

      Is a cargo ship. Not an ocean liner. Limited room and resources on board so food is improvised. Believe me, when options are limited, this is good stuff and you eat however you can.

    Donuts are plain yeast bread with a tiny bit of sugar in the dough(add some sugar to the water and dissolve before making the bread dough). That makes Sweet Rolls, Sweet Yeast Rolls, or Donuts. Let it rise, punch it down and re-loaf. Let it rise, punch it down, roll it out thumb thickness. Cut it and place on screen, cover it with a plastic bag but it is best to put the screens in a proofer (a proofer is s warming box with a pan of water in the bottom to slightly steam) and let it rise and then fry it. When you see the under side of the ring turning tan-light brown, turn it over and let it fry until you see the underside of the ring turn tan-light brown and pull it. Let it cool for about 1 minutes and then glaze. all wood drum sticks or 12 inch dowel rods are good turners. (drum sticks as in a drum set in a music band)
    Bakers secret tip.
    Any standard size box of cake mix or brownie mix will make cookies. 1 large egg, 1 stick of butter or margarine, mix it and spoon out the plops on a greased cookie sheet. Bake at about 350 degrees Fahrenheit (176 Celsius)for about 7 to 8 minutes. Watch them because some ovens are hotter and may over cook. If they look almost done, pull them and they will be chewy cookies, so maybe 6 to 7 minutes for chewy.

    My father was cook in the merchant navy and fried a lot of food. You might refer to him as a friar. I like to think of him as an international cereal killer.

    On British registered ships when you sign articles there's a list of what you are entitled to the menus are usually made by the ship's purser or chief Stewart he is the main organiser for the catering department and ordering of supplies for domestic use ie food cleaning and laundry services.
