Strawberry Crepe Cake Recipe (Strawberry Jam Whipped Cream)

1 - 1 1/2 pounds strawberries sliced and divided in half (if you want more strawberries between the layers, use 1 1/2 pounds)
Strawberry Jam:
Approximately half of the sliced strawberries (1/2 - 3/4 pound)
3 Tbsp sugar
juice from half a lemon
pinch of salt
Crepe Batter:
2 whole eggs
1 1/2 cups milk (375 ml)
1 Tbsp vanilla extract
1 Tbsp sugar (12.5 g)
1 cup all purpose flour (125 g)
1/4 tsp salt
3 Tbsp melted butter (42 g)
zest from 1 lemon (optional)
Whipped Cream Filling
1 1/4 cup heavy cream (240 ml)
1/4 - 1/2 cup powdered sugar (25-50 g)
1 tsp vanilla extract
1/4 cup strawberry jam
