Pandan Mung Bean Paste Recipe | MyKitchen101en
Yield: 500g paste
Ingredients:
150g split mung beans (soak for 4 hours)*
500ml water
100g granulated sugar
50g cooking oil
15g glutinous rice flour
¼ tsp salt
15g pandan leaf (Pandanus amaryllifolius, Screwpine) Хобби
It was perfect, we made it, I am in love with this paste, I made daifuku with it, but now I bought the ingredients for the snowskins, I will make it today.

Thanks for sharing, I love short cuts, I will pour in the glutinous rice flour mixed with the pandan juice then pour into the sift that sifted the mung beans paste -- " to wash it down " easier and faster .

For more authentic taste can we substitute water with coconut milk or cream? I believe this will shorten the shelf life of the mooncake.

You may try, cook until very soft.
Based on my experience the texture will be different, and lighter, airy. Better only the beans without skin

For homemade mooncakes with homemade paste, I keep refrigerated for storage, return to room temperature before serving. To keep longer, you may freeze it.

Can i skip glutinous flour?
You need glutinous rice flour to yield a smooth paste if you are using it as mooncake filling. If you use it for bun or pao, you may omit it.
Is it possible to make this recipe with dried pandan leaves or pandan extract? I wanted to try it, but I don't think fresh leaves are available near me.
Yes, but the taste just a bit different from using fresh pandan.

I haven't use pandan extract before, not sure how much is suitable, you may start with small amount, add bit by bit to water until your desired colour.

No sure, some leaves are bigger and some are smaller, use weight to be precise.

how long can you keep this in the fridge?
Keep in the freezer for 1-3 months, defrost and return to room temperature before using as filling. The paste will dry out in the fridge if your just keep it refrigerate.

I blend 15g pandan leaves with 75ml of water to get the pandan juice.

I think I over cooked a bit the paste looks a bit dry.How to make it soft?
Try add some water and cook again.
I added about 25g (add 10g at one time) of hot water knead until water absorb in the paste. It's work my paste is soft now.

Can keep in refrigerator?
Yes, wrap with cling wrap and put into container first. The paste will harden when chilled, add in some water and cook over medium-low heat until softened again before using. I usually use within 5 days.
