Beer Ice Lollys and how to make them

  • If you love beer and you love an ice lolly (popsicles as our American friends call them) then why not combine the two.
    Its simple and easy and works with most beers and ciders up to about 6% ABV.
    The bitters in the beer really become overpowering when beer is frozen so you need to counteract that with some sugar.
    Pale Ales and ciders seem to work best.
    Use 4-6 teaspoons of sugar for a 500ml bottle. Add more if you fancy.
    These take about 4-8 hours to freeze properly depending on the amount of alcohol.
    Any more than 6% and you just get a slushy even at -18°C
    Also, they drip a lot. These drips are mainly alcohol as this melts out first, so be sure to slurp them up.
