    Light ,aromatic ,soft and fluffy sponge cake layered with refreshing silky smooth texture pandan filling. Not only the design is attractive, the texture, fragrance and taste of it is also wonderful. Pandan cakes are here to invade your taste bud.
    8” Pandan cake ingredients:
    117 g egg yolks
    72g corn oil
    52g pandan juice
    52g coconut milk
    102g cake flour
    Pinch of salt
    209g egg whites
    102g sugar
    1 tsp lemon juice
    Pandan layer ingredients:
    Coconut milk- ml (315ml)
    Pandan juice add water- (735ml)
    Sugar- (157g)
    Agar agar powder- (10.5G)
    Hoen Kwe powder or mung bean powder - (105g)

    wow, i wish I could get pandan juice or leaves here in ontario, , really would like to try this recipe, any suggestions, where i can get it,. also what is the music in the background, it is so nice, would love to know the artists. thanks

      You can try to search pandan leaves at Asian or Thai convenient or supermarket. My background music is by Pierse -Your new fantasy.

    Hi, morning, can you explain detail for how to beat maringue? What speed use and how many minutes?

      Whip the egg white on medium speed for 30 to 60 seconds or until frothy. Start to sprinkle the sugar at this point, if you're adding it. Increase the stand mixer speed to high and whip until egg whites form firm peaks. Total time estimates around 3 to 4 minutes.

    Is the flour measurement correct? Only 102g for an 8in cake pan and with all that amount of “wet ingredients”? Can you please confirm?
    Also, if I can’t find mung bean flour or powder, can I substitute with cornstarch? Thank you so much for your reply. 🌹🌹🌹

      I used 25 pcs of pandan leaves plus 300gm of water.
