  • Health is a long journey and it starts in your guts. We've spent over a decade pinpointing parts of the average 'American' diet that make us feel awful and kicking them out of our home. Soy (in all forms), wheat/gluten, cow milk and dairy products, and seed oils are the four main culprits for US but they might not be for YOU. Maybe you feel just fine with cow's milk but always feel ill after eating tomatoes. Figure it out! Too many people suffer from poor health that could be resolved with diet changes. Keep a food journal, pay attention to your body, and feel better!

    We buy organic roasted peanuts (30 lb bag) and make our peanut butter, trail mix nut milk...I think when it's roasted fresh you shouldn't have any mould issues

      Mmmm trail mix. We used to eat so much, but the prices on nuts and fruit here are too high for us! That's what we get for moving further out from a city, though!

    Great video, you're right in my line of thinking, for olive oil it's all imported obviously but it's corrupted there is no way to know what it's it or where it's from. Soy I believe this should be only consumed fermented like a miso. Seed oils is just pure poison, should be banned. Lard is a good fat, cutting out the fat is not healthy (actually need good fat to loose weight) commercial lard here though is hydrogenated I'm hoping to find good sources of lard in Ecuador? Coconut oil I need it to make toothpaste (haven't need of any dentist since I make it)

      Colavita and Filippo Berio olive oil are available in Ecuador. Both are certified pure by the North American Olive Oil Association via random testing. Coconut oil and lard are available in most markets as well. There is probably no technology to hydrogenate commercial lard. Food processing is quite basic in Ecuador

      @junglecat7263 that may be true, but there's a lot of corruption in the olive oil industry, so we personally don't put a lot of weight into certifications. Coconut oil IS available, as we said, but it's much pricier here than we were able to get in the U.S., which was surprising to us - and no, there's nothing out where we are - only bigger cities and expat-centric town typically have it. Lard, technically yes...but...it's really really poor quality in markets here. We're particular about the quality and safety of our lard, so we render all our own. Food processing internally in Ecuador might be 'basic' in some areas, but there is a lot of importation that isn't.

      @LyannLaRochelle Thanks! It's true, the corruption of the olive oil industry is nuts. We had no idea until randomly coming across a great video on the subject and it was eye opening! YES on fat! hah, we love it. Commercial lard is sort of terrifying to me, and gives real lard such a bad name. Lard here is widely used, available everywhere, BUT the quality of the processing it lacking. It's rarely white, typically an off white to tan color, smells strongly of pork (not always GOOD pork, either). We render all our own. And if you aren't going to be raising the piggies yourself, you can usually buy the raw fat from a butcher and render it at home. You're headed to Vilca, right? Coconut oil should be easy to find there, and if not I know Loja has a bunch of places for it. There's a REALLY great natural foods place a few blocks from the Central Mercado in Loja called Grameria - they have a great selection of organic/natural products. And the people are lovely!

      @@tinyhandsbigdreams we originally planned to go to vilcabamba, however I heard to many recent stories that was a bit upsetting for us. So planning on Cuenca to start and get paperwork for visa's started and explore from there. We're not city people and not fan of the heat so a bit more elevation would suit us better. Kinda prefer somewhere without a huge population of expat, I won't go in details publicly lol.

    Nothing wrong with having bread. IBS and gluten issues are coming from modified wheat. I don't think Ecuador uses GMOs do they?

      While that's true for many people, some of us are allergic. And yes, it's likely stemming from pesticides and 'new' wheat, but once the damage is done it's hard to reverse!

      on the GMOS, here's what I found:
      Ecuador's constitution prohibits the commercial cultivation of genetically modified crops, but the import of genetically modified food is permitted as long as they are labelled. Other than labeling, there are no regulatory requirements for genetically engineered ingredients.
      So, still here in imported goods.

      @@tinyhandsbigdreams Just as I thought. Its generally safe for you to enjoy wheat and dairy as long as its locally sourced. I would consider doing a future video where you report on eating a meal with bread and dairy to see what happens. I bet you'll be very surprised. I've heard Ecuador has delicious breads. Give it a try!
