Filoni himself said in an interview in rebels recon(the one about the Rex vs Kalani episode if I recall correctly) that he always wanted to give the B1 droids in the clone wars an update to make them look more like in the movies, but since the show was cancelled he didn't have the chance (that was before season 7 was a thing ofc)
They kept fighting and didn't give up cause they were programed not to they also had better aim cause it was hard to see in stormtrooper helmets and they are better at melee than shootin

in legions the CIS didn't just fall apart after the leadership was destroyed, they along with rebel clones, and the surviving Jedi captured several words on the outer rim and formed the last free bastion of republic forces, there ultimate downfall was that they tried to challenge the Empire in open warfare and were eventually destroyed by vader and the 501st they along with several other factions would eventually come together during the rebel alliance founding.

i find it intereseting the security/police droids use the same E-5 blaster the battle droids do. cheaply mass produced for a new era
You can see some E-5s on the conveyor belt, so that also explains it. Saves more on weapon costs for security.
