For the lemon cakes, I personally find they work better if you place a slice of candied lemon on the bottom of a pre-greased ramekin, put the batter over top and cook in the oven. It comes out more solid and shapely and the baked lemon slice cuts the excessive sweetness
Hey! I made your lemon cakes and curd and they were amazing! However, I whipped the egg whites and they turned out super fluffy! I did this mainly because I live in Florida, where cakes are never light and airy enough, which means that sponge cake is harder to make. Since I didn't want to do more measuring for altitude, I found that adding a meringue helps!
