Even without the exact recipe, there are substitutes that can work. Real life has shown that indegridents can even be substituted or foregone. It why I like it when Futurecanoe can show a weakness in a recipe, even if he "blames himself"

Looks great! For future reference though, olive oil is not a high smoke point oil. Instead you could use canola or vegetable (there are other high smoke point oils, but these are cheap and accessible).

Ever wondered why people want to use "high smoke point oil"? its because oils degrade at certain temperatures and can be harmful, and people used to believe this had something to do with the smoke point, it does not. olive oil is a better oil to use for this than canola, even if it smokes a little.
A Tip, rounds are pleasant to look at, but absolutely not necessary, most shapes will do, and I would recommend peeling the potatoes (not fully necessary, but does improve the flavor), and slicing at about 1 inch spacing, ya know, give or take.
