  • What an easy, delicious, quick meal to put together on a week night. All you need is chicken, store bought or homemade dumplings, some chicken broth, and you have a delicious meal in minutes.
    3 chicken breasts
    1 chicken bullion cube
    onion
    2 stalks celery
    handful parsley
    3 eggs, hard boiled
    Store bought or homemade dumplings
    1/2 stick butter
    1/4 cup milk
    salt & pepper to taste
    Boil chicken, onion, celery, parsley, and bullion cube about 20 minutes, or until done. Remove chicken to a plate. Remove vegetables from the broth. Bring broth back to a gentle boil. Break dumplings into the broth. Stir gently so as not to break them up too much. Let cook about 10 minutes or until dumplings are tender. Add 1/2 stick butter, chopped eggs, and 1/4 cup milk. Stir and add chicken back to mixture. Add pepper to taste and salt if needed. Simmer on low about 10 minutes. And it freezes well.

    Macaroni & Cheese
    1 lb elbow macaroni cooked al dente
    2 cup milk
    1/2 cup half and half
    1 egg, beaten
    1/2 heaping tsp garlic powder
    1/4 tsp paprika
    1/4 tsp ground cayenne pepper
    1 1/4 tsp ground mustard
    1/2 tsp black pepper
    2 oz cream cheese
    1/2 heaping cup mild cheddar
    1/2 heaping cup sharp cheddar
    1/2 heaping cup mozzarella
    2 TBSP parmesan
    3 oz Velvetta processed cheese, cut into cubes
    Stir cooked macaroni noodles, milks, beaten egg, and spices together in crock pot. Add cheeses, stir together. Cook in crockpot on high for 2 hours.
    If you prefer, mix together and put in baking dish and bake on 350 about 30 minutes or so, until bubbly.

    I love your shortcuts. Your daughter-in-law is absolutely correct!! It is all your need. She is a fine young woman. But, yes, Carrots and onions and a toss of herbs will make everything just wonderful.

    Those quick store bought dumplings come in handy. Gotta say, I love my Nana's way the best. I like the flat ones too, not like a puffy biscuit.
    My Nana showed me... Using 10 cups of water, boil 8 10 10 bone in Chicken Thighs for a good 4 hours on a simmer. (De-bone/set in fridge) To the broth, add 4 chicken cubes/bouillon... 3 Chopped Carrots, 2 Chopped Celery Stalks. (Make the Dumplings):
    *Depending on humidity... use less or more Milk as you go.
    3 Cups Flour, 3 to 4 table Spoons Shortening - Blend with Dough Cutter or Fork... Should feel like Sand the would like to stick together but doesn't.
    ADD MILK... Little at a time... Stir until dough forms a ball. Add Flour and roll out... I add a little parsley, flake, salt and pepper to my dough mixture. When rolling, I like to keep it dusted from sticking and help the broth thicken. Drop, One by one in the broth...when the carrots are tender. When you stir your dumplings/broth to the liking... add the chicken that was de-boned back in. - My Nana served Yeast Rolls with this. I have to admit...I like using dried oregano rather than parsley in my dumpling mixture.... It set it over the top! - Happy Forth!

    I use the Mary Hill too. You can also tear flour tortillas and drop them in the broth. Delicious and taste just like you rolled them out.

    Nothing like a good pot of chicken and dumplings. Never heard of egg in it. I put and my Grandmother always put a small cartoon of whipping cream, plus regular milk. It comes out very creamy and we eat ours with cornbread. It looks so good. My husband and I celebrated our 53rd wedding anniversary on the fourth. Humbled and Greatly Blessed !!!     My grandmother made chicken and dumplings for the family back in the late 60s the reason I remember was because they were pink..she had put a little food coloring in them to make them special for me and my sister..

    Never heard of hard boiled eggs in chicken and dumplings! Now,I make a béchamel white sauce with chopped h b eggs and serve over toast for Christmas morning breakfast, like my mom did.

      Thelma I lost my mama a few years ago to Alzheimers. Such a terrible disease. I miss her. She was a great cook in her day.

    Ms Karen. My mama would boil a hen to make chicken & dumplings for Thanksgiving or Christmas. I make them when the mood strikes. I learned how-to make them from scratch, but I love the Mary Hill dumplings. Mama used to use some meat and the bone left from ham and make dumplings with that broth, ham and the boiled eggs. That's really good also. Goya sells little packets of ham flavoring
    < salty> You can use those to favor your broth as well. For the chicken and dumplings. For seasoning vegetables, I was taught to use bacon grease. With the Goya seasoning you can flavor vegetables that way instead, for a more healthy route. Just use packet or two depending how much you make. Use with some butter to taste..

    Mom always made flat dumplings, I make fluffy. My broth is seasoned with, chicken base, pepper, garlic, poultry seasoning, a bit of oregano and curry powder. Finely diced carrots, celery, and onion, are sautéed and added to the pot.

    Both my grandmother and mom used to make flat dumplings, she made chicken and dumplings, and also put cook them with large Lima beans. Soooo good!

    My Dad always wanted a whole boiled egg peeled just dropped in the pot. He said it represents the old fat hens whole life! The baby of the family usually got the prize egg!!! He was from the time of when there was a chicken killing early on the day usually for Sunday dinner when the whole family ate together.❤

    I make them almost exactly like yours except a lot less butter and I add a can of cream of chicken soup (has to be Campbell's for creaminess) love your channel. God Bless

    That looked like a wonderful pot of chicken & dumplings, just like my mother in law made, although she rolled out canned biscuits when she was in a hurry. They didn't have packaged ones back in those days. I loved hers. My mom made the fluffy ones but I don't like them at all. Thanks for sharing Karen.     I usually tear apart canned biscuits for my dumplings. Leave the lid on for 15 mins and they’re done. Your recipe looks yummy! 💖🌸

    I absolutely love chicken n dumplings! I add a pinch of poultry seasoning and a can of cream of celery or cream of chicken soup to mine. I sometimes add carrot celery peas and potatoes and we call that “Irish Chicken N Dumplins”. Can’t go wrong with this dish and we eat em all year round. 😋 YUM!

    That looks soooo yummy Karen. I have used those dumplings...I like them. Now, full disclosure....lol. My mama always made her dumplings and they were delicious. But, I decided that I needed to figure how to make them quick because with my job at the time I got home late. So, I bought, canned chicken, a can of cream of chicken soup, dumpling noodles in a bag....lol. They aren't as good as what you made but they are good and fast...you dump all of that in a pot of chicken broth or water or half and half. Make a pan of canned biscuits and you are good to go. It's quick, it's easy and it tastes good in a pinch. My mama loved it so much she stopped making homemade dumplings to all of our dismay...lol. My brother still is miffed at me for that...lol. Never thought to put egg in it but gonna give that a whirl....using the frozen dumplings of course...I have more time to cook now...lol.

    Hey Karen, I had to make chicken and dumplings and I make my own chicken broth I just do a hand and then I take all the meat off the bones and I use the broth and I make my own dumplings and I use the chicken broth and a little bit of milk to make my dumplings and roll them out and cut them with a pizza cutter in strips and I cut across and make little squares and then I let the chicken broth simmer, the chicken broth is very rich because I used onions and celery and carrots and a A small amount of sage in my chicken broth and also put a little bit of sage in my dumpling dough,, I drop the dumplings into the simmering broth and then I add the chicken at the end and gently stir them and then I put a pad of butter on the top and let them simmer until the dumplings are done and then I always put extra pepper on the top, I serve them with cranberry sauce and usuallyGreen beans and I always have leftovers so I store my leftover chicken and dumplings and mason jars and I vacuum seal the mason jars and then I freeze them

    My Grandma (she was from Alabama, too-then lived in Atlanta) used to make Chicken n Dumplins’! Her recipe very similar to yours-she made hers from scratch. I made your recipe and I loved it. I made it w a whole young chicken - your chicken breasts looked delicious, tho and much easier -I’ll use them next time, and I loved the dumplings you used. I’m not the cook my grandma was, but I think she’d be proud of my Chicken n Dumplins’!

    It's raining here in Jersey this morning so believe me a pot of chicken and dumplings would do me good about now I just finished getting off work I always put celery onion and bay leaves in when I'm simmering my chicken when I make my chicken soup so I would definitely do that when I was making dumplings and chicken too

    Yummy 😋!! I just love Chicken and dumplings!! Yes I like mine flat as well. My granny makes her homemade with flour. They are the best!! Potato dumplings are good too!
    You remind me of my grandma 👵 Shirley. You favor her alot! Same height and built. She could be ur twin sister...She's a sweetheart!
    Which is a good thing so don't worry 🥰. She lives in Greenville, SC! Im in Anderson, SC...(35-40 minutes away)..She loves to cook as well. Always cooking in the kitchen and loves to have the grandchildren over.

    love my mama's home made chicken and dumplings and she left the veggie and all with out the bones. sometimes she made home made dumplings and in a pinch she would use canned biscuits for dumplings but either way it was white and dark meat And I never found a Bone so delicious and homemade biscuits or cornbread and some kind of Greens, Polk salad, turnips Greens, spinach, collards

    I *love* chicken & dumplings. Mom made the fluffy kind, I do too. I use the old Joy of Cooking drop biscuit recipe, made with lard. You are so right - comfort food! Great any time, but divine in winter. And even making the drop biscuit kind, you can still easily make them for one. Just mix up all but the milk for the biscuits, and keep it in the fridge. Then you can make enough for 2-3 dumplings, so they're always just-cooked, because microwaved biscuits are just not on for the fluffy kind. 😄
    I've never had the flat kind, so it was great to finally see them made. They look great! I've never seen frozen dumplings in stores anywhere around here, but I'm sure they're not that much harder to make than biscuit dough. When I can force myself to wait long enough to make them while the chicken is simmering, I'll have to try these.

      Thank you do much. I've done the fluffier dumplings. Very good. We were raised on the flat. And you're right. It's so easy to make small portions. And they freeze well.

      I almost forgot..
      For our 4th of July celebrations, we have been blessed for the past 15 years or so, with some amazing neighbors who put on a fireworks show 🎆 every year for the neighborhood. So we don't have to buy a thing in that category. I make some simple finger foods that are easy to grab and throw on a paper plate, pull up a chair and enjoy the entertainment 😆

    Helloooo I was so happy to see you were making Chicken and Dumplings! I was really surprised at the eggs going in. I’ve never ever heard of eggs in Chicken & Dumplings, I’ve never seen butter in them either, i’ve not seen frozen dumpling sheets either, I make my own slick dumplings…I guess I have been living under a rock lol but I’ve been thinking of making some C&D lately it’s winter time here in Australia, so I believe I’ll be making them this week with some cornbread!     My mom used to call those long dumplings pot pie and we had them with a pork roast broth. I've never seen them in the grocery. Where would I look for those? I do really love the drop dumplings with just flour water and salt. It's simple but that's how I like them with chicken. For pork, I like the long dumplings. I could smell it from here! Loved it!

    I really didn't think it'd be that creamy. It looks good! I'll try that method. I make the fat dumplings with White Lily Flour. Yummy! I usually make a little rice and sweet cornbread. I have bottomless pit kids to fill up that love my food. I know you make the regular cornbread. That's what I grew up on, but I like sweet. Only my MIL made good regular cornbread. Somehow, she used enough oil to where it made the outside edges crispy in those little cast iron corn fritter molds. You remind me a lot of my MIL, one of the best cooks that ever came out of Louisiana!

      Thank you. White Lily is my favorite. I like sweet cornbread with BBQ. I raised 2 big ole boys 6ft and 6.4 ft and their Dad. You're right about bottomless pits. 😉❤️

      @@KarenJonesFoodFamily Hahaha the joys of living in Scotland hahah like I said I was born in Africa in Zimbabwe where it was hellish hot 🔥 it was a shock to us when we moved to Scotland 25 years ago, i long for the sun 🌞 an the care free days of lazing in the sun by the pool the spectacular sunsets an the game drives , my dad was a miner in a coal mine just a few miles from the mighty Victoria Falls an Hwange game reserve ..... it was beautiful 😍

    Those look delicious! I add milk to mine, too. I also stir a little cold milk and flour together in a coffee cup to make a slurry. I put it through a sieve into the broth to avoid lumps, and it makes the dumpling broth just the right thickness.

    I grew up with the fluffy dumplings, so that's what I like. Mine have never turned out quite like mama's, though. Some people call these "slicks". I heard Cracker Barrel had really good chicken and dumplings but when I ordered them, I was really disappointed. At the time, I had never heard of this type of "dumpling".

    Made those chicken and dumplings right after I watched the video...left out the eggs...husband loveeeed it..went on and on how it smelled so good when he walked in and how it was almost a love affair his nose was having with it...and it did come out tasting very good...so thank you very much for the recipe and the happy husband!!😚
