I make my meatloaf like my mom did, with lots of celery and onion. I also spread on a can of undiluted condensed tomato soup once the loaf is formed and, as it bakes, it makes a wonderful tomato 'gravy' that I love drizzling over my mashed potatoes.
I’m like you. Not real big on meatloaf but with brown gravy and mashed potatoes it’s delish! I loved the smile on Pop Jones face when he held up the meatloaf. I think he could have taken a big bite right off the plate then and there. I also really like cold meatloaf sandwiches with Hellman’s mayo! Thanks Karen and Paul 💕🙏

Yum yum… I use at least 3 lbs of ground beef, lots of onions, saltine crackers and eggs. Of course salt and pepper… I do want ketchup on mine. I make a big meatloaf so I can have meatloaf sandwiches all week for my lunch. I want mashed potatoes and green beans with my meatloaf meal. But yours looks absolutely delicious & I would like brown gravy with my mashed potatoes. I could eat at your house every day and never be disappointed.. If you would put the buttermilk on the tomatoes first and then add the cornmeal it will stick better. Learned that and cutting them in cubes from Brenda Gantt on her channel, as she always cuts her tomatoes and eggplant in cubes to fry them. I love meatloaf, but with the ketchup cooked on top!
Meatloaf is the perfect comfort food. I like a ketchup topping on mine. I put it on the last 15 min. I love scalloped potatoes and baked beans with my meatloaf. Enjoy your dinner!! It looks yummy. Happy holidays to you and your family 🎄
It is a comfort favorite and my hubby loves it too Karen....It's okay as far as I'm concerned....I much more prefer the mashed potatoes and gravy and sides....lol. I do love the end piece if I'm gonna eat it though. Glad pop jones got his favorite meal though. 🥰
