    I would insulate the outside 4" of fiberglass should improve the properties of the smoke house and resurface the outside with sheathing and you Will be able to protect the smoke house better by putting a second roof with a 2-4" dead air space and extending the roof with more corrugated aluminum/tin overhanging the edges by 10" since you know the human looses a large amt. of heat with a head uncovered no hat. An extra layer of roof will help hold heat as the smoke will still vent but a dead space with snow on top of the smoker won't cool down the inside. Why tear up such a nice insides and decrease your usable space?

    When you heat your smokehouse that aluminum off gases chemicals! Tin or sheet steel without paint is a good choice! Nice smokehouse though! Read up on aluminum and alzheimers! Love that firebox!!!!!!

    Just a suggestion, use firebricks to line your smokehouse walls, then cover with 1x12 boards, which will give you insulation, and the wood will absorb the smell of the smoke and with hot and cold, will breathe aroma back during heat cycle. The same principle as oak whiskey barrels breathing in bonded warehouses during aging process.

    You could easily put a cover on your chimney. A piece of tin riveted or screwed to the chimney would keep rain off of it. You could also put a coat of high temp paint on it.

    Air is your best insulator. Another chimney idea is insulated outdoor chimney. Wrapped in stainless.

    Hi Danny and Wanda. You built the best smokehouse I have ever seen! I have been butchering and smoking meat and cheese my whole life. I make my own hams and bacon, sausage, I have a great ring bolonga recipe that I make with venison and pork. I was wondering did you ever make a dry cured country ham? I have one that has been hanging one year, can, t wait to eat it on Easter Sunday. Thanks for sharing, God Bless.

    Thank you for the good information. I saw this one when I was watching the one on curing bacon, I'll go look for the sausage one. I received your sweet potato manual a couple of days ago, it is a good one and now I basically have that video plus some history in print so it is all still here if the lights go out.     Danny how about putting a roof over your pipe, just a small birdhouse type roof would work mounted to the pipe itself. That would save it from the weather and would be fairly cheap solution, then you could re-stove black your pipe.

      +TR Outrider Ive tried several different ways to prevent it from rusting.The paint just burns right back off.Even the high heat paint and the humidity just keeps rusting it whether its covered or not.Thanks for the suggestion.

    Now that is a nice smokehouse! In times of no refrigeration,smoking will be one of the only ways of preserving food. I definitley need to do something about that.

      +BCtruck, rebuild, repair,repurpose That is my thoughts exactly most people never think about food preservation.We are so use to refridgeration that weve become oblivious it never being there. Everyone needs one thats for sure.

    What a great smokehouse!
    My father was a butcher, so I grew up on homemade hams,
    sausage etc. Come fall was a very busy time for him, for he
    would butcher for all the neighbors.
    I have been wanting my own smokehouse for more years than
    I care to remember to share the art of smoking with my now
    grown sons and grandchildren.
    You gave me many great ideas for mine. Thanks for sharing.

    My old smoker was damn near Identical, with minor differences.
    River used to jump its bank in winter so my base was a lot higher as was oven.
    We had power to it, long extension chord and bought auto damper that opened two lihhtweigtvents just below roof joist..
    Did use stainless ipes for chimney, like an idiot I bought replacement items and 25 years later same original pipe.
    Bent ice of sheet metal into V to cover pipe keeps weather off.
    floor of house is rough cut 2x6 old growth and outside is recycled fir barn boards.
    My fold down salting bench was a 51 ford tailgate with cedar top.
    1x1 on innerside.
    Used for fish beef and game plus cheese smoker with cedar boards no other insulation just air space and once cedar absorbs smoke and fats drippings gives extra flavoring. Roff was regular one pitch but built extra strong dor hanging large bear haunches elk rumps etc. Stainless steel racks got from bankrupt bread place.
    Needed different hangers, smelt only about 6" and we fabled stainless tubing with stainless rods and hooks could smoke couple hundred at a time.
    Do you ever smoke your catfish or panfish, hell I even smoked carp.
    I use vinyl maple a pest bush but pretty in fall green for smoke and if dry for heat.problem is Gotta use my spoke shave to remove bark as it is creosote same as alder bark and others.
    No bark ever in smoker.
    Was long ago and I let the "SimplerLife. BULLSHIT ON SIMPLE, SLIP AWAY.
    Simple never,, what a laugh, you work harder, think harder, play harder and love harder, more on farm, nothing simple about it.
    Got great position and wage at modern factory, b but every day when watching crews shift changes all I thought was, "Hell they are no different than cows going to and from barns to be milked,
    Not to put them down, hell I fought management for their benefit for years until burned out, all work is good work if the wages are for man and family's benefit, and they know of no other life.
    You have a "Good Life", saying have a "good day" is cutting life into small pieces,.when we need to live its.fullness.
    A feeling plastic and concrete flattlanders will never know!

    Seems like some kind of rock wool would be inert enough for your usage. It would not be solid, but I have been using Roxul roxul .com on the house. It is firm enough to with stand what you are wanting to do - IMO. LOVE the smoke house.

    Drop your smoke pipe down to bottom of smoke house. Come out of smoke pot bout 14 degrees .should put you about two inches higher than bottom. Use clay pipe make a rock gargen to support pipe or cover hole pipe .rock and dirt .dont matter just protect pipe.. .for instigating use a mortar mix fire rated back fill the whole smoke house.. I built mine out of old pallets worked nice. I smoke fish and wild game .lol n most my friends bbqs hear..have fun .and smoke some!

    You mentioned you needed insulation to get a higher temperature. Could you get a higher temperature by moving the house closer to the fire box. Or would that cause other problems? Thank you. Great video.

    Plus once it season out. Its like a cast iron > It will take a couple of days of smoking > to season the inside of the Smoke House.. Then its ready to be used.. Idk what to use for insulation? I'am not going to insulate it > Just the plywood its attached too

    Brother what you need to do on your smoke house for Insulation is the best the God can give you Good clay and sand mixers as in cob you can add straw it will be OK I'd just use the clay and sand miners 2 or 3 in then add 1x1 strip to the sides then a couple at 2 foot were you can nail to use tin or that Aluminum stuff you used before the Tin can't have any coating on it I sand blast it when I did mine but one of the other will work I hope you see this I'd love to know names Shane Miller over at Is howdy neighbors love what you guys doing I'm doing the same trying keep it in God's hands Brother keep on gardening you know everything started in a garden amen brother

    I’m wondering if you simply put an inner wall leaving an air space if that air space would be enough insulation for The amount of temperature variance you need…. That said, the video is old enough I’m sure you’ve made the upgrade the way you wanted by now… I’ll have to go look for a newer video and see how it worked out.

    What type of insulation did you decide on?
    I think I would go with rock wool or a similar product that is made from rock.
    It resists fire temperatures up to 1200 degrees Fahrenheit so is pretty much fire proof for this application.

    Rockwool insulation, basically is shredded limestone, fire proof. And we use it against red hot metal won't hurt your meat.

    I got a roll of galvanized metal sheeting . What i'am going to line the walls and top with. Its was cheaper than the rolls of Aluminum sheeting

    You can use rustoleum on pipe and smoke your sausages first and cook em in stove in the house like I do on 175 with door kicked open slightly works great and you can monitor temp better my flame is 20 feet away from my smoke house under ground

    when You replace the smoke pipe next time have You thought about useing High temp BBQ paint to keep the rusting down?

    Thanks for the good description of the design and the reasoning behind the design. The subject of insulation interests me... Possibly put some rigid insulation on the outside of the wall and sandwich it between another sheathing of some kind.... perhaps corrugated sheet metal.

    If you still get comments! To take your smokehouse from a cold smoke to a hot smoke and get that temp up old BBQ base with charcoal in the bottom of the smokehouse will achieve that!

    Nice work. This is something we have been thinking about building as well. Is there a benefit to have the cement vs a dirt floor in the smoke house? The other question I have is why wrap it the poles in tin foil? Thank you for sharing!

      +Life in Farmland The cement floor makes it easier to keep out rodents. Plus its just a lot cleaner.We wrap the poles because they were rusty and were used on a construction job for years.Im all about being clean with my food.

    Use mineral wool like Roksul. That is what is used in commercial ovens

    This might be a little out there, but living in the south (west Tennessee), I love catfish, never really thought about the time coming of no refrigeration or freezers, so giving that thought can a person, or has anyone smoked catfish to safely perserve for food?

    Alright, This video was EXCELLENT! I'm and engineer and my daddy was a 50 year butcher so I have been around meat processing and smoking. I haven't smoked any meats in years but I am planning to start back up. I recently purchased a new grinder and got the stuffer all cleaned up. I am kicking around ideas for a smoker and before I looked at this video this was very close to what I was drawing up. I have to say I am impressed with your video and the little details you provided. It's too bad you didn't live near me I would love to make some Kielbassa with ya my friend. I have three questions for you. #1 What is the exact distance between your file and the smoker? It looks like ~ 6 to 8 feet?? How did you calculate that? #2 Why did you extend the pipe so far in the smokehouse and not just terminate it just inside flush with the wall? Was there a reason? #3 Do you have any sort of damper system on an exit pipe in the roof?

      Timothy Urbanski The distance from fire to smoke house is 5 ft. I bought 3 joints of 2ft black 6 inch heater pipe. This distance gives me the option to either cold smoke or hot smoke. The pipe sticks 1 ft into the smokehouse so that the smoke rises in the center of the smokehouse. The roof is sealed up pretty tight dont worry the smoke will find a way out. i have the courragated metal sealed of on the lower side of the roof and left open on the upper side so smoke can get out. Thanks hope this helps. I smoked bacon yesterday.

    Best smokehouse I've seen. What is the diameter of your pipe, please sir? Also, do you have a draft pipe in the top of the smokehouse?

      6 inch black stove pipe for the smoke. I sealed it pretty well, but there are enough cracks around the top that the smoke comes out. Later I plan on adding a draft pipe.

    Can you guys give some additional information on the salt box. You said that you didn't have it in the smoke house right now during the video, do you usually keep the salt box in the smoke house?

      +Brian Hill Due to our warm climate we found that its not safe to use the salt box. So we took it out of the house.

    this is one of our projects this summer hopefully, had to leave my pile of bricks I was going to use to build one in maryland but have a few other idea's... what did you use for the hanging bars?

      oh yes thats right thought it was something else..got inturpted watching lol had to run into town and make the rounds at the coffee house to get about a 100 pounds of used coffee grounds

    I live in swampy south Louisiana. I am planning on my smokehouse build but am worried about the firebox. How do you keep water out of it?

    Suggestion: For your insulation, try washed raw wool and build a false wall (2” deep) on the inside, and pack the wall with wool. Wool would have no chemical release and is naturally flame retardant. I’d gladly give you some ideas on washing (rinsing) those raw wool fleeces through email

    Is there any kind of wood/lumber that you shouldn't use when building a smokehouse?

      +Farmer MeeMaw I wouldnt use osb plywood,any treated lumber or plywood. I would use any lumber in its natural form. Like poplar,oak ,pine,birch,maple any natural wood that hasnt been processed.

    Excellent design!
    As for insulation, I'd use Reflectix behind the metal.
