Cornbread Dressing and Gravy

- CORNBREAD FOR DRESSING
Combine:
1 1/4 cup cornmeal
3/4 cup flour
3/4 teaspoon salt
1/4 teaspoon baking soda
2 teaspoon baking powders
1/2 teaspoon sugar
ADD
3/4 cup chopped onions
4 beaten eggs
2 tablespoons oil
1 cup buttermilk
Mix good. If batter is thick add small amount of milk. Pour into a well greased pan.
Bake in oven 400 for 25-35 minutes or till cornbread is firm but not dry.
CORNBREAD DRESSING
Crumble cornbread into very small crumbs. You can do this either in separate bowl or pan you bake it in.
ADD
1/2 tablespoon poultry seasoning
1 Tablespoon of sage
1/2 teaspoon pepper
Stir then add
4 beaten eggs and stir good.
ADD
1/2 can of cream of celery ( if you prefer you can use celery)
1 can of cream of chicken soup
Stir into bread good
Add 7-8 cups of chicken broth.
Mix well. Dressing should be slightly thin.
Bake at 400 for 1 hour or until texture is solid.
Giblet (or Chicken) Gravy to go with Cornbread dressing
3 Tablespoons good vegetable oil (Wesson or Crisco)
3 heaping Tablespoons flour (any kind; I use all purpose)
Salt & Pepper to taste (I used at least a teaspoon salt and added a little more after gravy was done); Black pepper ratio is usually half to ¼ (of salt) depending on your taste
3 cups hot chicken broth
1 can cream of chicken
¼ - ½ c finely chopped turkey or chicken bits (If you have cooked giblets - liver, gizzard, neck) you can finely chop this; make sure no neck bones are in the meat if you’re chopping the neck meat.
In microwave safe dish or small pot, heat chicken broth and whisk in cream of chicken (You don’t want this lumpy).
Heat large skillet; add oil; (I add my salt to the oil because that’s how my Grandma Hooper did). When oil is hot, add flour; whisk it in and stir continually until it’s a light golden color; add 2 cups hot liquid (will steam up so don’t get to close to the skillet); using your whisk, keep stirring until your gravy is smooth; when gravy starts to thicken, add another cup of broth. As gravy starts boiling, add chopped meat; let cook a couple minutes; then pour into gravy bowl or dish.
So precious “wish I could hear mama slam cabinets again” I wish I could call my mother and grandmother so often. Call and visit your mom and grandmother and family often once they are gone you can’t go back. 🥲😞♥️♥️♥️

I just love y'all. It's like visiting with family when I watch your videos. I'm so glad I found y'all. I'm from Rincon Georgia, that's near Savannah. I know what you mean about missing your mamma cause I sure miss mine. For many years while I was growing up we lived next door to our cousin Mae. Mamma's mamma and Mae's mamma were sisters I think. Anyway, I was just going to say you two remind me of them in the kitchen. Just imagine what you are doing in a kitchen just big enough to squeeze by each other or even had to let the other go by before you. I guess you could say we were a very close family LOL. I hope y'all continue making videos for a long time. I'm pretty new to your channel but if you haven't already maybe you could bring out some family photographs and share them with us some time. If that's something you would want to do. No matter what I'm going to keep on watching. God's abundant love, favor, blessings and protection on both of you and your entire families.

I've joined your RUclips channel and my grandmother that we called maw maw was a great cook full blooded German came here to Texas as a child and cooked for her parents but never wrote a recipe down so it's all gone but you remind me of her in the kitchen, she talked laughed and sang gospel as she cooked. I've put some of your videos in my library of cooking videos. Love watching and learned your videos. God bless you both. She also made a vinegar cobbler and if you know or learn of one it would make me the happiest old man alive.

Looks delicious. My dad doesn’t measure either. He uses my great grandmas recipe and knows it by heart. My first thanksgiving away I called him and said I need the recipe for dressing... he said “oh it’s a little of this and a little of that”😂 very funny! He makes cornbread dressing too. PinkyMa Linda: I have a few baking pans & a fryer pan that belonged to my mother-in-law. Her baking pans are a lot like yours. I’m almost certain she told me that her ‘roasting’ pan belonged to her late mother or possibly her late mother-in-law. Do you happen to know the brand? Those are workhorses. There’s one pan that has a story behind it. Her husband bought her a pan bc he loved fried chicken. Over the course of frying, the center bubbled up like it was supposed to be there. That bubble pan turned out to fry the absolute best chicken. It’s an exceptional defect w/ that has left some priceless stories.
I just came across your channel & love the way you team up together in the kitchen! Your dressing & gravy are very similar to the way my Mom would cook. I will definitely be making this for our holidays. Thank you so much for explaining everything so well!

We always crumble our cornbread and biscuits for dressing in the food processor. It makes fine crumbs and great dressing.

If you just want to make cornbread can I follow this same recipe for "CORNBREAD FOR DRESSING" but omit the onion? I have never made cornbread from scratch and I love to have cornbread with my beans. My husband and I live in Paris Texas and when we want to get away for a few days we go into Jefferson and stay at one of the B&B's. The first stop to eat is always the cornbread restaurant there in town. I love their cornbread and pies. Someday I'm going to learn to make a buttermilk pie. I do want to make then cornbread dressing for thanksgiving also. Thanks for your videos and stories.

I'm 69 yrs old and I never did know flour and oil was suppose to be equal parts....but I guess its because I NEVER learned to cook from anybody.....I have learned everything on my own the hard way. My mom never had anything to cook with....we were just happy to have anything to eat. My grandma passed when I was 12 but she was crippled up with arthritis from the time I was 8 yrs old and couldn't use her hands either so she couldn't teach me. I had to feed her and everything the last few yrs of her life. Mama had 8 kids so food wasn't easy to get so we couldn't learn much from mama either....but I love to cook and now with a bad back I can't stand long to do anything.....my grandma was only 64 when she passed....
