this is how I kno my mom makes barfi....I see everyone else mixing little syrup at a time....I myself have thrown away so many batches of barfi before because I had no one to show me how to do the syrup...jazaakallah.i appreciate this vid so much now u can use our local ingredients n give us a better ratio wit the ingredients
If you don't get it right don't throw away the barfi put it back in a pot an keep turning it to help the sugar dry up an help hold the mixture together just it will have a little caramel taste. Don't throw out good stuff.
You can use a colander to sieve the mixture in the beginning (incase one doesn't have a food processor). Just lightly press through the holes and you'll get the same granular texture. Additionally, one doesn't need ginger in this recipe (not everyone likes this) and nor is it needed. Cardamom and some ground nutmeg would do the trick.

Hey! The sugar mixture is very very tricky I will admit myself... it needs to thicken up... when u dip your spoon in the mixture and pull it up, the liquid should not really flow straight off the spoon... it shud drip off...or ‘thread’ as they say... it is tricky but keep trying it

Everything came out good but this recipe needed either less milk or more sugar and water mixture. It came out grainy n dry mixture did not hold together. But it tasted great. Just it is not in a block form
Thanks for your feedback! I’ve changed the measurement from 2 to 3 cups of sugars and back to 2 a few times... but I eventually included a note about the both measurements. I’ve done it with 2 cups and it held together nicely but the 3 cups is the safer bet especially since that sugar mixture step is such a tricky part. I hope it can be of some help to others using the recipe. Thanks again for sharing your experience.
Lol I’ve been practicing since I was 12 and now I’m 34 and it still either not holding together well enough or the sugar end up cooking a little to long and get a little color lol... now as far as everything else I’m an expert (using that term lightly lol) but this is my number one problem...

The ratio of the cream and powdered milk might be wrong....more powdered milk and less cream for it to be more crumbly
