- Hey guys! 👋 Welcome to Tea for Two.
This week we're making a classic French pastry - Financiers! Made with egg whites, brown butter and almond flour, these little cakes can be easily customised to whatever flavour you like simply by changing out the toppings. We're going with chocolate chip, almond and raspberry today but you can use pretty much any fruit, nuts or whatever you like.

INGREDIENTS:
110g butter (88g brown butter)
3 egg whites (approx. 96-99g total)
80g icing sugar
¼ tsp vanilla paste or extract
18g honey
50g almond flour (finely ground)
40g plain flour
For toppings: raspberries, chocolate chips, almonds
EQUIPMENT:
silicone mould - rectangles
standard muffin/cupcake pan
mini muffin/cupcake pan
