I ordered my df83 a week ago after seeing other reviews and this review made me extra certain I made the right choice! I’m upgrading from a hand grinder and I fall into the category of drinking traditional and modern espresso types as well as pourover so this really was the best option for me.
@@Conservator. I got it yesterday and so far the espresso has been delicious. The pourover I made hasn’t been too different from a handgrinder, but I think there were many fines so I’ll try again after removing the declumper
@@ThePorkTree I still haven’t been able to tweak the declumper since I’ve been traveling and didn’t have the correct screwdriver but the espresso made from it is quite good and mostly on par with what I get at 3rd wave cafes even though my machine is lower end.
After using the Sette 270, Niche, and DF64 with SSP MP and SSP Cast, I finally feel like I’ve landed on what I’ve been looking for with the DF83 with SSP HU. I love modern fruity and floral coffee, but I still want my espresso to be sweet with good body and a lingering aftertaste. Most of the best espresso I have ever tasted has been from the Mahlkonig Peak and to a lesser extent the Mythos grinders at nice coffee shops. I wish I could have those 80mm lab sweet burrs from the Peak in a reasonable single dosing form factor at home, but I finally feel like I am in the same ballpark with this setup. I felt reasonably happy with my modified DF64 and the SSP Cast burrs, but they seemed to be much more fickle with different coffees and occasional astringency. I’m excited to see what SSP can do with an 83mm lab sweet style burr.
@@pvtghost24 hey! I’m happy to update. I still feel very positive about the 83mm SSP HU. Ultimately, I wasn’t in love with the DF83 platform itself. The static on v1 was mildly frustrating and I don’t like the workflow of the bellows. I sold it and decided to try the Sculptor 78s and 078 which I haven’t received yet. In the meantime I’ve been using a Pietro with pro burrs and a hyper aligned Vario with Ditting steel burrs. I really like the Pietro for turbo shots and filter. The Vario is solid, but I hate the form factor and grind settings. Right now, I do miss the DF83 and I wonder if I ever would have got rid of it if I had the v2.
The chute taper is a real issue. I had the declumper completely clogged up once. Nothing coming out and grinder still goes wild causing serious clogged up with ultra fine grinds blocking every exit. A pain to clean up. Also the inner chute might start pointing towards right due to the build up at exit. It will end up colliding with outer chute cover making it impossible to take apart. I broke my inner chute when doing this disassembly.
Lance you are really becoming one of my favourite coffee channels.. also: I am so looking forward to a potential review of that lever machine in the background 🙏🏻
As someone that is stuck between traditional and modern espresso, I absolutely love my 74mm HU burrs in the atom 75. They had a lot more clarity than the stock burrs but were not as sharp and acidic as the 64mm brew burrs.
Thanks for finally making this video! So happy having upgraded it from an SD40 and Sette 30 (though I still want to compare the Sette with the DF83). Fully agree with your comments about it straddling the divide between a conical and flat profile. It fits my preference perfectly for that reason as I generally prefer milk drinks as well. So happy with it but also wish it used a DC motor which would have allowed for the additional of variable speed. Fun fact - its "20" grind setting is in the wrong position and is actually centered on the 19 mark on the current stickers.
Loved the little Jack Johnson interlude! I'm very tempted by this grinder but I have yet to see one of these that I think looks more aesthetically pleasing than the Niche Zero
I have encountered the clogging issues with this too. At first it was user error, but this has even happened on its own, without having the PF too close. I have now removed the declumpers and I am testing to see if it clogs less. Unfortunately, removing the declumpers also adds a lot of static to the grinds. I like the grinder, but I am still trying to find the ergonomic sweet spot.
@@LanceHedrick I have tried with and without. I still get quite the static, especially clinging to the cup. Your grind did not look static laden at all, and you didn't use RDT in the video. Maybe is has to do with the beans? Edit: Ok I just tried again with the included RDT bottle, and the static is reduced (before I tried a spoon handle dipped in water ala James Hoffmann). But, there is still a bit of static clinging to the machine, between the chute and holder. It was just about no static with the declumpers installed. I wonder if there is a good static guard / declumper you can recommend? Thanks for your thorough video!
When do you encounter the clogging? Are you grinding larger amounts? Joe @ Espresso Outlet said clogging can happen if the grouinds in the cup get too close to the chute. I personally haven't had any issues even when seasoning the burrs.
Dear Lance sorry to have been so scathing this morning over your mist the coffee dissertation. In actuality it was very excellant. It was on a par with Yale, Princeton, Harvard. I can't drink coffee any more. Oh I may relapse but I really should not. Your dissertation was top notch. I'm just upset because I can't have coffee any more. I bought a C38 because I needed a decent grinder to use while I did my research on what I was going to get because I make espresso 7 days a week for me and my wife, but sometimes I want to enjoy a pourover. I've considered getting an Ode for that but it felt silly...so I was considering the Niche but it seems nigh impossible to get one to the US in any reasonable time, and this is the same price. Thanks for making my mind up for me, once again, Lance

I've had no clogging problems. Joe @ Espresso Outlet said it can happen if you get grounds too close to the chute. I've also had no problems with the declumper.

If a Kinu or Commandante can achieve a high quality grind I'd probably still buy one of them instead if I could afford one of these babies. As grinders go the price of a quality hand grinder is still a dastardly expense though. Still love watching videos on these high end grinders.

Just to confirm, the ode in the comparison had the SSP HU burrs, not the MP burrs that Fellow sells with it (and I think were raved about in the earlier video)?
It sounds like you were saying the 83mm SSP espresso burr is also higher body and sweetness and conical like or were you still talking about the DF83s stock burrs? Was there a noticeable bump in flavour clarity on the SSPs while still keeping the body? What I'd like to compare with is the 64mm SSP MP Unimodal burrs, and/or SSP 98mm Espresso burrs.
Hey Lance, how would you recommend the DF83 for a light commercial cafe setting to do single origin espresso? We're working on a budget and want to get 2 units of a single dosing grinder, one as a lab/training unit and another as our in cafe grinder. We were looking at the DF64 or DF83 and had reached out to turin about whether or not it would last in a light commercial application but never received a response. P.S. we spoke at SCA this year and it was the highlight of my trip! Thanks for being an awesome person!
Over your left shoulder looks to be a Lelit Bianca V3 in black with walnut accents instead of the stock maple accents on the black version. Please let me know how your were able to find this configuration. I would like to purchase the black Bianca but I prefer the walnut accents over the maple. I have asked several retailers if they would be willing to swap out the maple for the walnut and so far, no retailers have been willing to do so.
Found the same thing, DF83 does well at coarser brew methods, even though it has some fines it doesn't seem to cause much negative effects besides lower clarity but more body (bit more aftertaste maybe too as a result). People are saying the declumper might be contributing to the fines (but I'm not sure that's the case for mine, it seems well behaved). Are you saying the Stock burrs did better for pour overs than the SSP espresso burrs on the DF83? I'm guessing more clarity with SSPs? Would be interesting to hear how the SSP compared for light roast espresso as well. Were the 83mm SSP burrs a significant jump in clarity while still somehow having good body?
I thought the declumper was good, at least on mine it seems alright, doesn't seem like it holds back much coffee, and using the bellows doesn't get out as much 'extra' stuff as the with the DF64. It IS an updated Declumper design, similar to the latest DF64 v4 but a little different for some reason. On my DF83 the grounds come out in a nice smooth non clumpy stream, no RDT necessary. I haven't opened it to see if there's anything in the chute or not. Probably could just look up there. I think in most grinders it will accumulate in the crevices of the chute. I've heard some people had issues with clogging up / stalling when seasoning, or using the hopper to grind a lot at once. Mine hasn't ever clogged and I accidentally ground way too fine the first few times I used it. But I am doing generally 16 - 18g single doses. Funny, I used to drive people nuts knocking on things / playing drums too.
Great review, Lance! Thanks for all the time you put in to help us coffee nerds sort out our coffee game! I have been considering a Niche Zero, but it seems the DF83 might be a better way to go. Although you did say this is the grinder you would buy under $1,000, you didn't specifically mention the Niche so I'm curious what your thoughts are between the two.
Lance prefers flat burrs if I remember - but a few years ago he recommended the niche to me for under $1,000. My guess is he would support the Turin over the niche. I do have the niche and love it, but I’m only using it for espresso.
I think they're both around the same price point with stock burrs (depending on location). But I had DF83 (unseasoned) and a Niche Zero (seasoned burrs) and found the taste profile was actually pretty similar, a tad less body but more flavour clarity on the DF83, but shots were a lot smoother and more enjoyable on the DF83, both were easy to dial in and get good results, but DF83 was better. Workflow and accessories / grind noise, I think the Niche Wins there still, but DF83 isn't too bad, it's louder but also much much faster. Also waaaay heavier. I wonder if they just put in some extra weight in there to make it seem higher end :D It's heavier than a Weber Key I believe!

What grinder would you recommend for home use. Primarily for espresso and French press. I have a budget of £500 in the UK and want something that also looks good on the Kitchen workbench as well as grinding fine for espresso. Would also want a hopper for the beans rather than a single-dose machine.

Good to know. I currently have the SSP 64MP and find then to sharp and acid focussed. Maybe I take a look into some 75 mm grinders.

If a Kinu or Commandante can achieve a high quality grind I'd probably still buy one of them instead if I could afford one of these babies. As grinders go the price of a quality hand grinder is still a dastardly expense though. Still love watching videos on these high end grinders.

Just to confirm, the ode in the comparison had the SSP HU burrs, not the MP burrs that Fellow sells with it (and I think were raved about in the earlier video)?

It sounds like you were saying the 83mm SSP espresso burr is also higher body and sweetness and conical like or were you still talking about the DF83s stock burrs?
Was there a noticeable bump in flavour clarity on the SSPs while still keeping the body? What I'd like to compare with is the 64mm SSP MP Unimodal burrs, and/or SSP 98mm Espresso burrs.
Hey Lance, how would you recommend the DF83 for a light commercial cafe setting to do single origin espresso? We're working on a budget and want to get 2 units of a single dosing grinder, one as a lab/training unit and another as our in cafe grinder. We were looking at the DF64 or DF83 and had reached out to turin about whether or not it would last in a light commercial application but never received a response.

Over your left shoulder looks to be a Lelit Bianca V3 in black with walnut accents instead of the stock maple accents on the black version. Please let me know how your were able to find this configuration. I would like to purchase the black Bianca but I prefer the walnut accents over the maple. I have asked several retailers if they would be willing to swap out the maple for the walnut and so far, no retailers have been willing to do so.

Found the same thing, DF83 does well at coarser brew methods, even though it has some fines it doesn't seem to cause much negative effects besides lower clarity but more body (bit more aftertaste maybe too as a result).
People are saying the declumper might be contributing to the fines (but I'm not sure that's the case for mine, it seems well behaved).
Are you saying the Stock burrs did better for pour overs than the SSP espresso burrs on the DF83? I'm guessing more clarity with SSPs? Would be interesting to hear how the SSP compared for light roast espresso as well.

I thought the declumper was good, at least on mine it seems alright, doesn't seem like it holds back much coffee, and using the bellows doesn't get out as much 'extra' stuff as the with the DF64. It IS an updated Declumper design, similar to the latest DF64 v4 but a little different for some reason.
On my DF83 the grounds come out in a nice smooth non clumpy stream, no RDT necessary. I haven't opened it to see if there's anything in the chute or not. Probably could just look up there. I think in most grinders it will accumulate in the crevices of the chute.
I've heard some people had issues with clogging up / stalling when seasoning, or using the hopper to grind a lot at once. Mine hasn't ever clogged and I accidentally ground way too fine the first few times I used it. But I am doing generally 16 - 18g single doses.
Funny, I used to drive people nuts knocking on things / playing drums too.

Great review, Lance! Thanks for all the time you put in to help us coffee nerds sort out our coffee game! I have been considering a Niche Zero, but it seems the DF83 might be a better way to go. Although you did say this is the grinder you would buy under $1,000, you didn't specifically mention the Niche so I'm curious what your thoughts are between the two.
Lance prefers flat burrs if I remember - but a few years ago he recommended the niche to me for under $1,000. My guess is he would support the Turin over the niche. I do have the niche and love it, but I’m only using it for espresso.
I think they're both around the same price point with stock burrs (depending on location). But I had DF83 (unseasoned) and a Niche Zero (seasoned burrs) and found the taste profile was actually pretty similar, a tad less body but more flavour clarity on the DF83, but shots were a lot smoother and more enjoyable on the DF83, both were easy to dial in and get good results, but DF83 was better. Workflow and accessories / grind noise, I think the Niche Wins there still, but DF83 isn't too bad, it's louder but also much much faster. Also waaaay heavier. I wonder if they just put in some extra weight in there to make it seem higher end :D It's heavier than a Weber Key I believe!

What grinder would you recommend for home use. Primarily for espresso and French press. I have a budget of £500 in the UK and want something that also looks good on the Kitchen workbench as well as grinding fine for espresso. Would also want a hopper for the beans rather than a single-dose machine.
