Why don't u like making casseroles? My mom always told me wen u have a BIG FAMILY sometimes they're the BEST!!! I've never seen the way u did it. This is a must try dish!!! This is how my mom taught us; 3-5 chicken breast in a pot, bring up to boil. (Save the chicken water for a rainy day) 1 big can of cream if chicken 1- 16oz of sour cream 3 small cans of green chilies diced Do as you were doin for ur corn tortillas Take out chicken frm the water, let them cool off and shred the chicken into bit size Mix together the sour cream, cream of chicken, green chilies, add any type of seasoning to taste. Put the corn tortillas on the bottom of a pan, put your chicken on top of the tortillas Merit it out add your sauce layered it out put some cheese on top of it and repeat the process, until you have 3 layers of lazy chicken enchiladas, to finish it off put cheese on top and put in oven @ 350 degrees and cook it until the cheese is melted. Add toppings like; Green onions Chopped up tomatoes Cilantro Lettuce Hot Sauce
Can you do a video for tamales de rajas con queso please!!!!!!!!!!!!!!!!! I'm pregnant and cheap af so I want to make them instead of have to buy them everyday!!! THANK YOU!!!

That technique of using the proceeding tortilla to help take the one frying off the pan. Picking up stuff like that, the little things, is why I love watching people cook, and why this channel has so much to offer. That aside I make chile verde all the time but have never made a green sauce without tomatillos and with creams in it. I'm very interested to try this soon.

I made this and it came out soooo good!! It taste similar to my green Enchiladas but with corn. I made it with a whole chicken that I threw in the Ninja and I seasoned it with salt, pepper, cumin, paprika, garlic powder, chile powder, oregano, and Cheyenne pepper. It had really good flavor. The meal feeds about 10 ppl. I thought it wasn't going to be enough for the 6 of us but with rice and beans it was more than enough even for seconds. I will definitely make again thanks for the recipe!
I made this the other night and it is so delicious, I added some red bell pepper and black beans, seriously so good. I've been eating it everyday, I have one serving left I'll probably eat it for breakfast.

Girl....... I thought I was the only one who used Rotisserie chicken for dishes like this or my chicken cheese enchiladas. Not only is it convenient, but It's has it's own yummmilous flavor that make your taste buds say Mmmm, Mmmm, good! Its my secret ingredient when I do them for family gatherings. Cause I don't want my mom nor my Tia's to think in commiting some type of mexican food suicide! Hahahahaha......and everybody loves them!
I just go a 1/2 bushel of Poblanos from my local farm today, I will definitely be making this. I may add a Serrano or 2 to the Poblano sauce, but this looks like a great recipe.

I remember my madrina asked if I wanted a pastel azteca for my birthday and I said no because I thought to myself why an Aztec cake ? I thought she meant a regular cake with Aztec designs lol . A week later it was her daughters birthday and she served me pastel azteca that she made and it was that ! I was so confused and I just laughed to myself but this is an amazing recipe ❤️😋
Although I have yet to try it, I like this recipe for Pastel Azteca because it does not call for tomatillos ( which, I know, are a significant ingredient in many Mexican recipes but which I find to be too sour for my palette ). I will try this soon!
I made this last night. The sauce is excellent. I would make a couple changes just on personal preference: next time I would season and roast the chicken instead of boiling, for a better flavor. I would blend all the poblanos as biting into a hunk of poblano is not my preference. Lastly, I think it needs another vegetable ingredient to give more variety. Potatoes come to mind but I’m not sure. Anyway, it’s darn good as is, and that creamy green sauce is beautiful. BTW, we made Claudia’s caldo de papa soup and it’s one of the tastiest things we’ve ever had. Highly recommended!
