LA Times restaurant of the year! Not surprised after seeing this story. How charismatic and articulate is this chef! Wonderful story and reminded me of my own past growing up surrounded my parent’s hand made cigar shop on 3rd St near Wilshire. Unfortunately I never took up the trade as this young man. Cannot wait to taste all those wonderful dishes when I visit LA.

Thai restaurants that over diversify into things like Tacos and fried chicken basically scream "struggling to survive" to me. Looking for ways to expand the menu to bring in more revenue. I get it. But, I don't walk into a steak house thinking I'm going to order pizza or fried rice. It's so hard to find "just" a Thai Restuarant that isn't serving Chinese, sushi, or whatever. Some people don't want you to break "out of the mold." The reason that I want to eat Thai is for THAI - not some young cook/owner thinking what can I do different today? Thai culture is based off of certainty - that your go-to shop is going to have the same menu items / recipes today and for the next 25 years. That's why you can walk into a shop in Thailand and ask someone eating there and they'll tell you that they've been eating there for 15 years etc. Sorry - Thai food is not based on personality, it's based on consistency. Americans have this notion of what Thai food is supposed to be and it's very far from the real deal.
Great videos, but I am a bit confused on what your RUclips channel is becoming. I believe it is going all over the place: Food review, documentary, RUclips channel review, commercials, and etc. Again, these videos are great, but I feel there is no longer a focus and consistency from how your channel started.
