It always warms my heart that you guys un-self-consciously share food like this. Just passing a sub around and everyone taking giant bites. There is a sort of comfort in a genuine friendship that’s impossible to fake, and that’s one of the reasons Jolly is so great!

@@ezequielmondada6427 Right? But I get what he's saying. I'm American and my friends and I have travelled Europe with my group of travel friends who are food-lovers. And everywhere we go we all get something different and immediately share after first bites. We've gotten the same surprised (mostly happy) reactions both in Europe and in the states. To some people it absolutely not normal and that makes me sad, but some people are very particular about "this food is mine".
I am all for sharing food but I cut off a piece. Something about your mouth touching and biting where I’m about to put my mouth grosses me out

Family recipe is an American thing. With so many people displaced from their homes (huge levels of immigration in this country until recently), people wanted a way to say that the recipe came with them from their previous homeland. It wasn't something that they just came up with here, it carried their culture with them. Often, recipes were ALL people brought with them. A lot of people use food to communicate and stay in touch with their roots, so to speak. Italian-Americans were particularly fond of this idea, probably because people love Italian food so much over here.
People have not been displaced from their homes in huge numbers because of immigrants. They been displaced from their homes because Blackrock has bought up SO many homes on the market, jack up the prices and so everyone else raises theirs. Look it up. Do some research before you put out false information. Thanks 👍

I also find that when it comes to BBQ it is also "Family Recipe" but doesn't necessarily come from Europe. Just got to be careful the ones with those good recipes don't pass before you get them.
This is very true - it’s also, as with my stepmom’s family, that the women would often immigrate before the men, especially if they had family in America already, and they had no other trade skills than cooking. So they would set up little restaurants or food stands and they became very well known for a particular dish based on a secret family recipe. Keeping it secret was literally essential to their livelihood.
I just love these types of videos! There is one with a family from New Zealand, and their reactions to the incredibly diverse foods we have here in America blow their minds, as you see in this video.
Philly born/raised. Cheese Wiz is a tourist trap thing. Real Philadelphians don't put it on our steaks. (French fries, yes. Steak sandwiches, no.) "Wit'" onions means "with onions." It's not the name of the onions. One steak shop became famous for abbreviating the question "with or without onions" (except they dropped the "h") to "wit' or wit'out." It eventually became an advertisement/tourist thing. However, we Philadelphians generally order our steaks with the additions listed sorta like a shopping list ("cheesesteak, provolone, fried onions,..." or "...no onions...). 99% of the time, we don't have to be asked. Also, if you say "cheesesteak" and don't specify the cheese, you're probably going to get American cheese. If you don't want cheese (maybe you're lactose intolerant??), you just say "steak,..."

Just saying, processed cheese is no part of a true Philly cheesesteak. And in my own opinion, covering it with that gunk defeats the entire purpose of a cheesesteak. Steak, Provolone, onions, peppers and spices is all that belongs on a real cheesesteak.
Good to know. I've been to Philly once in my life long time ago. Certain foods ya want to try when ya visit. NY its Pizza. NC its BBQ. Charleston its shrimp and grits. New Orleans its Cajun and Creole. South Florida its Cuban. Don't remember where it was in Philly but it was supposed to be a "true" Philly steak. And they put cheese wiz on it, which I'm not even sure if its actual cheese. Was terrible. Provolone, motz, swiss, american, jack or any other cheese would have been a significantly better choice. And because of that, thought you philly people were just insane to ruin a perfectly good sandwich with cheese wiz.

Ok, 1:11 is exactly what so many cheesesteaks outside the Philly region miss on. They just lay the cheese ontop, or just on the roll and don't mix it in on the flattop.
It was killing me that they called it “whizz cheese” instead of “cheese whizz”, tho maybe that’s for copyright purposes or smth?? 😭

As an american deep down inside i know always as a fallback plan in any country i can open up either a , burger joint, chicken joint, sandwich joint, or all three. and live pretty comfortably.
As someone who has lived in Philly for the past 8 years, this puts a smile on my face. I also want to visit the Passyunk bar in London so bad!
These 2 were 2 of the first young bucks I saw try American stuff on this channel lol .. so the way it works is, in Philly you order simply with the type of cheese, then with “wit” or without onions. So the proper way to order is for me cooper sharp wit. Or if you want cheese wiz, you would ask for a “whiz wit”. Which like said means a cheesesteak with cheese whiz and fried onions. Without onions would be a whiz without or provolone without. Love you guys!
Thanks, I should have read the comments before posting the same thing. Family from northern Delaware, Army-Navy was the biggest annual event for the family since the 40's so Philly was always a treat.
The good thing about making these at home is, you don’t have to buy a rib eye if you can’t afford it, to make these. Any decent cut will do. Throw it in the freezer for 45 minutes to get it cold, to help you slice it really thin. I’ll sauté it in equal parts olive oil and butter. A good hoagie roll. Provolone cheese, diced onion, green onion, minced garlic. Lots of garlic powder and pepper sprinkled over the top. I use sirloin tip steak, top sirloin, strip loin, skirt steak or rib eye.
I've always wondered if those thin-sliced meats they sell for Asian hotpot would work well for this

For those of you who also watch or tune into Sorted Food. There was a series where the crew review Restaurant Food Kits. When covid was still big, restaurants in the UK either did to go only or they made Food Kits to where you can do at home. It was mostly done for you, so you had to do minimal cooking or warming up sides and your main. One of the kits reviewed was this restaurant.

Between chinatown, lots of Korean restaurants throughout town, north end with Italian, the seafood scene and more there’s endless possibilities in Boston alone! New England as a whole they’re missing out on the apples, and a lot of regional things!

They should for sure schedule a road trip through New England for next fall. Hit up Boston, NH, VT and Maine while the fall foliage is peaking and go apple picking and eat all the maple baked goods and clam chowder their arteries can take 😂 would also be extremely funny to see them hit up Salem while they're done up for Halloween. Ollie would probably dig the history there too.

Max grew up so fast. I was never as undergrown as he was for a certain age. But I did have a 3 inch month one Summer. 4 inches total that Summer, and 8 inches total that one year.
Which is probably why as a 6'3" guy, I have so many back problems.
But I will NEVER forget the pain I felt in my shin bones during that 3 inch month. It was unbearable at night.
For the roesti, I'd suggest turning the whole thing out on a plate to check for doneness--will probably hold together better than the toss and flip method, particularly if not done yet. I've also done hash browns by mixing the oil in with the shredded potato instead of in the pan.

I live in a primarily Hispanic community, so in restraints here, instead of just plain yellow melted cheese we actually use queso with tomatoes and jalapeño chopped bits. Absolutely love it! Gives it the kick it needs. Add some grilled mushrooms and sautéed unions and you’ve got yourself a killer cheesesteak.

Apparently I've been doing Philadelphia wrong. I've been living in Philly for 2.5 yrs and I still haven't had a proper cheesestake, let alone been to a dive bar or gotten a pickle back!
I'm with the green juice idea. I think what's held me back is how brown a cheesestake is.
In my defense: I highly recommend, on your next trip, you go to Redding Terminal Market and get an equally MASSIVE 14 hr roasted, brisket sandwich, that has been sliced paper-thin, with cheese and grilled mustard greens. The mustard greens MAKE it!
I'll just say this: I went there at 11 am on an empty stomach knowing full well what I was going to do to my body 😅, and decided I'd take the other half to go and have it for lunch the next day. That portion didn't live to see 6pm.

Apparently I've been doing Philadelphia wrong. I've been living in Philly for 2.5 yrs and I still haven't had a proper cheesestake, let alone been to a dive bar or gotten a pickle back!
I'm with the green juice idea. I think what's held me back is how brown a cheesestake is.
In my defense: I highly recommend, on your next trip, you go to Redding Terminal Market and get an equally MASSIVE 14 hr roasted, brisket sandwich, that has been sliced paper-thin, with cheese and grilled mustard greens. The mustard greens MAKE it!
I'll just say this: I went there at 11 am on an empty stomach knowing full well what I was going to do to my body 😅, and decided I'd take the other half to go and have it for lunch the next day. That portion didn't live to see 6pm.

Not sure pickleback is a uniquely Philly thing? Pretty sure you can get that anywhere in the US now. But a uniquely Philly thing is the "citywide special". A pabst and a shot of Jim Beam. Used to be you could go to a dive bar and ask for a citywide and it would be like 4 or 5 bucks for a shot and a beer.
@jolly If Armand and Max wrangle a trip to Pennsylvania, I'll have to show them the largest buffet in America, the Amish and Hershey. All that is within 45 minutes of each other.
That would be so much fun to see! My first time there I was overwhelmed because there was so much to choose from and it was all homemade and soo good

Why not hit up South Jersey too if they were to go to Philly, they could also go to Atlantic City(AC) too. They should do a DC to Boston trip.

The Acela Corridor goes from DC to Boston, it’s just by train instead other methods of transport. If they do go DC to Boston, they could also go to Hershey Park and there is a lot of foods to try and places to go and visit.

Max and Armand - a blast from the past! Loved them when they were high school kids and they've grown up but they're still kids. Also I just realized they're my twin brother and myself when young. He could eat the messiest things and spill nothing but I was hopeless.
