How to Make Harissa Moroccan Style

  • Harissa is a delicious spicy jam from the middle east. This is a Moroccan recipe passed down from my mother. The recipe can be customized to your taste by using mild, moderate, or hot chili peppers. Harissa can be put on any food type, from a bread spread, sandwiches, salads, or even main dishes like fish, chicken or beef. It compliments any dish by adding a savory spicy pepper dressing. Trust me - if you have never had harissa before, I promise you will love it at first bite!
    Ingredients
    Chili Guajillo (moderate heat) 32 oz. or 900 grams (stems and seeds removed)
    Chili Puya (hot) 3 oz. or 84 grams (stems and seeds removed)
    Chili de arbol 3 oz. or 84 grams (optional it's extremely hot) stems and seeds removed
    1 whole garlic head (minced)
    1 cup of olive oil divided ( 1/2 a cup for seasoning + some for dicing and for drizzle on top)
    1 Tbsp. of salt (or to taste)
    1 tsp. of ground cumin
    2 Tbsp. of white vinegar (act as preservative)
    Harissa develops flavor over time
    Harissa sauce
    1 heaping tsp. of Harissa paste
    1/2 cup water (depending on the consistency you like)
    Juice from 1/2 a lemon
    2 Tbsp. of olive oil
    Salt to taste
    1/4 tsp. of ground cumin (optional)
    Enjoy!
    עריסה מרוקאית
    900 גר׳ פלפל צ׳ילי (חריפות בינונית) מנוקה מגבעול וגרעינים
    84 גר׳ צ׳ילי חריף (מנוקה מגבעול או גרעינים)
    84 גר׳ צ'ילי סודני (מאוד חריף -אופציונלי) מנוקה מגבעול וגרעינים
    1 ראש של שום כתוש (או יותר אם אוהבים)
    1 כוס של שמן זית מחולקת (1/2 כוס לתיבול + לטחינה ולזילוף מלמעלה)
    1 כף של מלח או לפי הטעם
    1 כפית של כמון טחון
    2 כפות של חומץ לבן (משמר את העריסה)
    עריסה מפתחת טעמים עם הזמן
    להכנת רוטב עריסה
    1 כפית גדושה של עריסה
    1/2 כוס מים (תלוי ברמת הסמיכות שרוצים)
    מיץ מ-1/2 לימון
    2 כפות שמן זית
    ומלח לפי הטעם
    ניתן להוסיף 1/4 כפית כמון אם רוצים

      thank you, it's really not that complicated, to make it an easy task, you can clean the seeds from the peppers and the next day you can make the Harissa.
