  • This is one of those recipes that will help get you through the current food shortages and tight budgets. It is also a fast, easy, one pot meal, loaded with flavor and nutrients, that will satisfy your whole family.
    There are tons of substitutions and variations, so you can make dinner with what you have on hand. You can use any meat you have chicken, pork, beef even fish, fresh, leftover or canned, or use no meat for a delicious vegetarian meal.

    My mother is Japanese and she said fried rice was actually their way to use up leftovers. Leftover cold rice and veggies and meat. And she added cabbage and eggs also. We loved it!

      💯 My dad is an islander and to me, fried rice cannot be made with fresh rice. It just doesn't have the same consistency. Fresh rice is for fish and a dish alone. Leftover rice makes the perfect fried rice and the best way to use up whatever protein or veg is leftover in the fridge.
      I warm up the protein in butter, then some veg, then add leftover rice on top, then top with raw egg, salt and seasonings and scramble/fry it all up evenly.

    About 50 years ago I was reading Ann Landers column in which she included a no fail recipe for rice. I always use this recipe and it comes out perfectly. Recipe below-
    Turn oven on at 325 F
    Follow the instructions on the rice package.
    When water comes to a rapid boil, put in the rice, stir, clamp the lid on the pot, put pot in the oven for 20 minutes.
    Don’t open the oven until the 20 minutes is up.
    When rice is finished, fluff with a fork.

    I watch your tube messages when I can . I am a stay home care giver and since I retired I have been taking care of my lovely wife with the Alhzeimers and I have been trying to cook good meals and it has been a real struggle. I can cook a meal if I have some guidance, so I watch to get it from you . You are a very good teacher.

    This is similar to my fried rice, but I add onions and celery, plus I use strictly Soy Sauce instead of salt. I love fried rice just about any way you want to prepare it.

    That cook book looks so well done. I love the format, photos and the larger text than I expected. Hillbilly Kitchen, Verses and Vittles. I could use some prayer for healing my debilitating fatigue, if anyone has the time.

    I always rinse my rice “before” I cook it. It removes some of the starch and it is not so sticky when you cook it.I learned this from a Chinese cook.

      Soaking overnight, then rinsing well, also removes a lot of any arsenic residue that a lot of rice has.

      My grandma learned to rinse it beforehand from the locals when they were missionaries in Mexico.

      @@petesmitt That would be for the most part in whole grain rice. This looks to me like white rice. It also reduces the cooking time of whole grain rice and makes it softer.

    I just got my cookbook and I LOVE IT! Can't wait for your next one. I'm going through it and love the scriptures and the family stories. Thank you for sharing this valuable resource of cooking simply and old style without all the processed foods that people are used to.
    By the way, I was born and raised in Hawaii and we use leftovers to make fried rice. The best rice is the day after because it dries in the refrigerator and medium grain, at least that's the texture we like in Hawaii - sticky rice. Blessings to you!

    Cold, leftover rice is best for fried rice and stir fried dishes. There's something about the texture, it doesn't get soft or soggy. This is a great meal, flavorful and filling.

    For soy sauce, we use Japanese Shoyu sauce which doesn’t have sugar in it.

    We have recently started using Jasmine rice. It cooks in fifteen minutes and has a very nice flavor. It is also the rice our local Japanese takeout uses. We really enjoy it.

    I discovered by accident that rice needs special treatment. We used a lot of rice and we would freeze the leftovers. I made a batch of fried rice and used one of my packages of previously frozen rice. It made a HUGE difference. The rice broke into individual grains and incorporated into the dish without clumping and didn't need anywhere near as much oil to make a really good fried rice. Try it, it works marvelously.

    I love all your cooking videos. They really make me feel good. And remind me if the awesome cook my Grandmother was. Unfortunately I didn't have her long enough to learn from her. I was fairly young when she passed. I was 12. But your cooking reminds me so much of all the things I remember her cooking for Sunday Famiky meals.

    Hillbilly Kitchen Verses and Vittles. I love this recipe, I've never tried it but I am now. It look's so good. I love your videos, takes me back to when my granny would cook. I love the verses too! I finally got to go to church today, it was in the parking lot but it was a blessing. Thank you for sharing Becky, especially the verses 🤗.

    What a breath of fresh air! I would love to get one of your cook books, Verses & Vittles. Your videos are always very simple and use common items that most people already have in their pantry. I agree that we need to teach our children the Pledge of Allegiance and should say it everyday. Thank you for putting this video together today. God bless you.

    I would really like to be entered in your cookbook giveaway. I’ve tried several of your recipes and enjoyed them thoroughly. I love to cook and when I want something I haven’t cooked before , I go to your channel and choose one. I’ve purchased spices I never knew about until I watched you cook.     Hillbilly Country Cooking...Verses and Vitals....I love your videos but especially the one on Divinity!!! My father-in-law used to make it but never shared his recipe. I haven't tried it yet but I plan to. May you and you family have a Happy and Blessed Christmas and a Blessed New Year!!! I have been watching for about 2 yrs.

    This a favorite dish of ours. Thank you for adding the chopped cabbage. I would have never thought it! I can add less rice. I love watching you. You’re so inspiring and friendly. I love your accent. I get called out a lot for my Texas drawl. 😊

    Great recipe and video. I like how you explain how you cook It’s easy to understand. I am not a cook but the last two years I have been trying to cook. I have always been a great baker. My dad said my mom tried to teach me to cook when I was young but I did not listen. I sure wish I would have listened. Hehehe!!

    Love your channel. Reminds me of my grandmother and moms cooking. I don't have any of her recipes written down, so i have to rely on my memory. I like how you include the scriptures with recipes and the national anthem. I don't have it yet but it's on my wishlist. Thanks for your homegrown values, that's hard to find now days. Karen
