    Thank you for showing us your technique! I’ve been using corn starch to thicken my teriyaki sauces but it gives the sauce a cloudy look that is extremely irritating. I did everything you did and did not need corn starch at all. Glossy, dark and properly thick. Right on!

      The correct recipe for teriyaki sauce is to make it without cornstarch.

      Thanks for your comment.
      Rice vinegar cannot be substituted because it brings out the acidity.
      Sake is used to bring out the flavor, so I would recommend beer or white wine as a substitute, but the taste of the goal is far from the recipe in the video.
      Please try making it with sake!

    I use Marukan rice vinegar, Kikoman soy sauce, garlic and ginger paste, dark brown sugar, and a little bit of honey or real Canadian maple syrup and a little bit of corn starch to thicken it

      Japanese teriyaki sauce is basically made by boiling down sugar and mirin to thicken the sauce, so please give it a try!

      @@m777bill I didn't add vinegar in this recipe, but if you add black vinegar at the finish, it will be refreshing and delicious!

    hey chef how can i make light teryaki sauce?

      If you want to keep the taste light, add the following to the teriyaki sauce when it's done
      You can add as much black vinegar as you like!
      And If you want a lighter consistency, reduce the simmering time by half for a lighter sauce. Please give it a try! If you have any other requests, I'll be happy to make a video :)

      It is all ingredients, so if the storage conditions were good, it could last up to a month. However, it depends on the case, so please eat it as soon as possible

      It should be fine for a month or so, but it does change with storage conditions, so use it sooner rather than later!

      Thank you for your comment. I don't have a specific designation, but...
      Soy sauce → Real soy sauce is made from soybeans, wheat, and salt!
      Mirin→Mirin made from glutinous rice, rice malt, and shochu is real mirin!
      There are many similar products with additives, so be careful! You can make really delicious Japanese food with just one soy sauce!

    What causes it to thicken ?

      If you overcook it, it gets too thick!
      The salt won't evaporate, so just simmer it down, tasting it slowly!

      I guess it just cooled down, if the sugar is freshly melted the sauce is runny...after cooking it for a while the water will evaporate and it will thicken. But after cooling down, it will thicken even more. (answer 5 months to late though :-) )
