Years ago I made a beer can Turkey with a Fosters. It does work. Drink some of the beer to make room for the seasonings. Add more of the same seasonings outside the bird with olive oil. It steams the inside. Best turkey ever.
The brine is legit. Family already asking/confirming that I’m cooking the turkey. I look forward to another great meal.
I have used it the last 3 years. Brine, 1.5 hour smoke, then deep fried..

My Treager pro22 isn't big enough for that size bird..... lol, since watching your channel I will always brine! Done it a few times and it makes a big difference. I also just started injecting, over the top. Thanks for all your vids, great info for us beginners and pros alike.

I've done 3 20lbs turkeys with their brine and seasoning, Noting makes it juicier you wont be disappointed trust me! The key is the brine.

I use pie plates. A regular BC chicken up to a Turkey sits perfectly in a 9 inch pie pan
Also helps to collect renderings for spoon basting and gravy etc.

A can opener takes a lid off of a beer perfectly when doing beer can poultry. Makes it easier add seasoning and herbs

All time favorite rub for turkey? Last year I did honey hog bbq but trying to decide if I should try something else. Everyone loved it last year.
Honey Hog & Voodoo are my go to. Holy Gospel is a close 3rd. I'd go Voodoo.
I am all about the brine. I use it year after year, and during the year cause my wife and I love the turkey sandwiches all the time.
Question, I tried to understand what you were saying about the skin. I cook at the 275 mark and my skin always seems to be rubbery. How do I make it crispy? I’ve tried butter spritz, hotter toward the end of the cook but can’t seem to get it right. I’ve even tried removing the skin prior to the cook and dusting it down with your herb and garlic dust, but that made it tough on the outside. Last year I simply removed the skin prior to serving. Didn’t look to good but tasted great. Would love to have some advice on getting the skin edible.
I would have to wear a sack over my head so people wouldn't know I was buying a Miller lite.😂
Was wondering if you have had a problem with the paint on the cans before,because I've had the paint disappear from the can before on chicken. So I bought a trager chicken throne that works great. Don't know if they have one for turkey.
Been doing this for a couple years. I use Fosters. The large can size is perfect for turkey.

No reason to not brine a turkey. It's like it's a completely different meat. People who say cooking on beer can does nothing, have either done it wrong or haven't tried it.
Yea I think the way the bird sits is the biggest thing, it seems to baste itself similar to rotisserie in a way!
I also use a potato or something to plug up the neck hole

Mayonnaise as a binder for poultry seems interesting. I'm guessing the oil in the mayonnaise helps crisp the skin?
The protein (eggs) acts as a moisture barrier. It works!

Only tip I have after cooking this for many years, fosters king can, much wider than a Miller light 22, more stable, don't need the pan.
The pan is optional and catching the drippings for gravy.

Use a good beer with flavor. Use a crowler from a craft Brewery. A darker beer just don't use a lager or pilsner.

Ok I have the bird baptism brine and plan on brining the turkey overnight. Here’s my question…is it counterintuitive to brine it a day early, pull it out of the brine,and then let it sit in the fridge uncovered for a day to dry the skin? Trying for a best of both worlds, but don’t want to nullify the wet brine.

I have brined them because it's the only turkey I can get around here, it works fine definatly worth it.

Purdue makes a specific can of beer just for beer can chicken! All the flavors you want in a chicken! Don’t recommend drinking it though!

Still use the brine with a store bought turkey? Not too salty?
No because it will reach equilibrium. If the turkey has 10% brine and you put it into a 8% brine soak it’ll reach 8-9%. It’s the same thing if you over salt pasta, pour the water out and use non salted water to boil it. It’ll pull the salt out of the pasta.
Can you actually taste the beer?
Question... It's risky to shoot to have a large smoked meat ready at a specific time. I'm not giving my mother in law another reason to tell the family I'm an idiot while everyone waits. Can I shoot to have it ready several hours early and 'hold' the bird at 140 degrees until ready to serve (like brisket)?
I wrap in foil and stick it in an igloo cooler that's at room temperature. It'll stay warm for a couple of hours that way and it won't dry out near as bad if you continue heating it.
You could pre game it. Buy a turkey this weekend and smoke it while timing how long it takes to do the whole thing?

The breast meat looked dry to me. I think spatchcocking the turkey would be better on a pellet smoker. Beer can method might work better on an offset with the airflow cooking the breast faster.
