  • This Flour Tortilla Hack Will Save Taco Night! With this easy tortilla hack recipe you'll never have to buy soft flour tortillas ever again. Home made flour tortillas are easy and tasty, and these tortillas made with pork lard are super soft. The use of a heated tortilla press makes perfect round flour tortillas every time!
    Chuds BBQ Channel: / chudsbbq
    Ingredients:
    450g (750 mL / 3 cups) all purpose flour
7 mL (1½ tsp) coarse salt
10 mL (2 tsp) baking powder
    100g lard
250 mL (1 cup) warm - hot water
    Method:
Place flour, salt, baking powder and lard in a food processor.
Pulse until the contents look like wet sand.
Turn the machine on, and slowly drizzle in the water until a dough ball forms.
Allow to run for 1 minute or so after the dough ball forms.
Take the dough out of the machine and let rest in a covered bowl, or wrapped in cling film for 30-45 minutes.
Portion the rested dough into 16 balls that weigh around 50g each.
Cover and let rest 10-15 minutes.
Heat your tortilla press over a medium high burner, and press each ball individually for 15-20 seconds.
Lift the top plate and turn over and continue cooking until done.

Glen, I worked at a pizza crust factory as a dough maker. Even when we were making 160 kg batches of dough we would feel them to see if they moved correctly. (if that makes sense)
Also your tortilla hack is used to make frozen pizza crusts.
We ran our platens at about 350 F/176 C for about 5 seconds but cooking wasn't part of the equation. Just forming the dough for freezing and then other plants put their ingredients on them. We served a number of chains and freezer section brands.

6 cups flour 3 large serving spoons of shortening if your dough is to dry add more next time . i like the beef tallow Walmart kind pinch of salt or 2 , tip of a spoon of baking powder, baking soda 1 and ¾ cups of milk i mix the shortening until it's well incorporated squeeze the mixture over and over add warm milk a bit at a time and it should come together if you need more water add it in small amounts. Once it's a ball of dough i put mine in the microwave for 30 seconds i work the dough 30 more seconds microwave work the dough and let rest for at least 2 hours in a warm place i like his technic but i use a rolling pin and i make about 4 dozen tortillas from this amount his method is way faster. Keep trying and trust me your tortillas will be much better than any factory funny smelling flour tortillas they sell at the store.

Descended from one of the many Rodriguez girls, my grandmother made tortillas, my mom too. It was not our mainstay, that was pasta. However, I was REALLY taught how to make tortillas by two Mexican Father-in-Laws. Secret, warm water [you got that X] AND the information that the fat/oil should be less than you think. In fact, it only has one purpose, to grease your hands! Do not add salt, do not add any other additives. [Milk, if you are making for kids who won't drink their milk!] I love your show... how much? A lot, you are clear, concise, fun! Love that Jules comes on at the end! ~Marie

Glad to see your heated press cooked tasty tortillas. I've bad experience with electric tortilla press. Tortillas seemed to dry up. Not so much to become crispy, but instead tougher to chew/bite. Same kneeded flour when rolled out with pin and cooked on griddle, it's very different and more likeable for my personal preference. Don't know if it's just about moisture, or the pressure and heat combined have some effect as well.

I've been hand rolling tortillas for a few years now and have been eyeing up cast iron tortilla presses for a while now. Might invest and give this a go.

❓so which press are you using and can you provide a link please ? I don’t see link.
And, what temp do you set stove to? I have glass top electric.
Thanks Glen! Want to try this great idea! Just made homemade ones today, wasn’t so fun rolling them & my recipe called for butter and they weren’t supple or tasty.

Bradley and Glen on one show? I saw Bradley's build video a while ago (even shared it with my ex-pat Mexican friends) but in looking for a new fat to flour ratio (to make the tortillas pliable) I came across this (TORTILLA PRESS ON THE HOB/STOVE?). What an epiphany!!!!
    Thanks Glen and Bradley!!!

Just for note, trying to nail the tortilla recipe by using bakers %, I have to use butter/ghee/oil due (marriage... how can people not ear lard???). and bread flour (to raise the gluten, 6% produced great tasting tortillas but not so pliable, 16% was better, I see your test here was 22%. As you suggest that you are going to find the perfect recipe, mind running the test?

My jaw actually legit dropped seeing this! I have been doing mine in a cast iron pan and rolling them out with a pin. They are always slightly wonky, but my mission is clear now. What a fantastic idea!

I used your technique for keto tortillas (based on Diedre's Kitchen bread recipe minus the yeast). I actually gasped with glee when my first try didn't shrink to the size of a drink coaster. They cooked beautifully--thanks for a wonderful idea.

Hi Glen, need help. I followed recipe and used press on the stove top. I put them in a pot wrapped in a towel while I made them all, got the 16. We started eating about 15 minutes after last one was cooked. The tortillas did not remain soft, they got a bit crunchy around the outside edges. Not sure if there is a way to keep them soft like the store bought ones?

Hello there! I'm curious to know if the weight of the top plate allows for the tortilla to fluff up at all or not? I wanted to use this hack to make Indian roti and was wondering how I could fluff it up? Thanks for any info. This video has been a game changer for me. If I can press a roti and cook on the same one, nothing better than that!
