Can you cook a GOOD brisket in three hours? Look, we all know that big briskets, and low and slow and stay up all night used to be the thing, and I know, I know, some cooks still really enjoy doing it that way. But come on folks, we got AI! We got Chat GPT! Well, not in BBQ yet…but I did cook a hot and fast brisket in three hours! And you know what…it was incredible!
Of course, it wasn’t an 18 pounder either. This was a little seven pound choice brisket I picked up mainly to do one more test one with my OFFICIAL APC BRISKET Rub which is now available online and in stores. But MAINLY I got this brisket because we hadn’t cooked and enjoyed one in a while. We’ve been crunched for time lately and I thought this would be the best brisket to cook for dinner in a short amount of time. I figured four hours, but man, I was done in three instead! OMG was it good!
For this cook I’m using HASTY-BAKE ROUGHNECK BARREL SMOKER and some lump charcoal with a little bit of post oak and mesquite chunks for South TX flavor. I love the set-it and forget-it of this particular cooker and that’s why I chose it for this cook.
And who says you can’t cook meat side down on a direct cooker? I’m running fat side up on this cook.
Let me tell y’all…this brisket was WOW! The results were super impressive and yall definitely wanna stick around and check it out. Now let’s get fired it up and cook a THREE HOUR BRISKET! Развлечения
Arnie says, "I'm not saying it is right or wrong, I am just saying that's how I do it." And that's what makes him great. So many guys come on and make videos and say their way is the only way and any other way is an abomination. Learn from everyone and do what you like. Thanks Arnie.
Looks great! Very much the way I cook all my briskets. Hot and fast, wrap in foil and a blanket. Drop in a cooler "yeti" and let it finish. Beats babysitting all night in my book.
What temp do you run it at?
Mesquite is one of those secrets to a great taste too! I'm glad I found your channel and somebody who ain't afraid of mesquite.
Well my friend that’s all you find in the rio grand valley
Great cook Arnie , I’ve heard of a hot and fast brisket cook but never tried it I think you just convinced me to try it. 😋👍🏼
Look up Myron Mixon's fast and hot method. That's where I got it. Makes a good brisket fast and lets you go do other things withought babysitting it. Low and slow is a bit better but I have no complaints
Loved the video. Thanks ❤
Looks absolutely amazing for a fast cook brisket. I’ll definitely have to rethink that low and slow method.
The little packer briskets are some of the best. I have a little smoker called a po man and it smokes some of the best food ever.
That’s crazy to think 3 hours. I’m honestly too scared to try this one 😂
From Jacksonville FL appreciate ya brother learn every time
Looks delicious Arnie 😋
I happened upon your channel a few weeks ago. Love it!!
Just the video I was looking for 💯
Do a video with cowboy Kent Rollins! You guys are the best 💪🔥
Dude! Very cool. Need to check out the new seasoning.
Looks amazingly delicious 👌🏼
Thank you for using CHOICE
While you were eating I was imagining dipping some of that brisket in that juice on the foil 😋
Awesome I’ll have to try this out soon
Thanks - exactly what I was looking for - direct heat Brisket! How far above the heat does the grate sit on the hasty bake - Thank you
🔥🔥🔥🔥🔥 God Bless Your Channel!!!!!
Warning!!! Make sure your grill/pit is pretty clean if doing hot and fast. First one I did 5 years ago I came out after about hour and half. All paint burnt off smoker. Opened lid and my 14 lb prime brisket looked like a black meatball. Smoker had caught fire and fatty brisket was just more fuel.
Learned a valuable lesson
Was it a pellet smoker?
@@whitechris720
Yes. Old Oregon made Traeger. Heavy duty. Not like this thin Chinese junk they sell now.
Ordered some OG and APC Brisket. The WOW was really good I'm sure these will be great too.
Thank you
I like the Scobie snacks. It's just the two of us here. Besides feeding the neighbors any tips for leftovers?
The looks amazing 👏 🍺😁😎
good vid dood!!
Looks delicious...👍👍
Can I do this with a 3 pounder without overcooking it? Should I adjust the time, cook temp?
Sangwich....my late sister used to say it like that... :)
Saludos y bendiciones desde los dos Laredos.🙏👍✌️🇲🇽🥩🫕
Looks delicious! How were those Scooby Snacks!?
Hola great video Sir always watching ur videos! where can I buy a panel U used for brisket? Thanks 😋👍👍
I got mine at Walmart, tnx
Ima give this try I really didn’t want to stay up all night smoking a brisket
BBQ brisket
The brisket was very tasty ❤❤❤
You think it’s possible to cook a brisket on a pellet smoker for three hours using those temps? Or does the direct heat make it cook faster? Thanks
Direct heat is faster imo
Arnie can I get the same effects that you achieved on a Traeger pellet grill?
Arnie, without driving 100 miles my local store always has select quality or local beef brisket (consistent price is $3.99 #). Are there any special considerations when cooking these briskets compared to choice quality? I have had varied results.
Pick one with the best marbling you can find make sure to do a beef tallow wrap and keep a close eye on the brisket to make sure you get through the stall nice and smoothly
What fuze below but also I find select to be much better when cooked at lower temps like 225-250 and do not overcook it, at low temps it should be perfect at 197-200 ish.
Shout out @ArnieTex Oye Compadre :) I went and Got The Wow and OG Seasonings! #Come On Absolutely Fantastic:) #All The Other seasonings I had out the Door BRO! #Keep The Smoke Light & Make It Work 👊🏼ESO Puro South Texas In The HOUSE :)
very nice...
Where can I get the brisket rub in Corpitos?
What is the exact Hasty Bake Roughneck model? I see a few models on the website.
There are only two lol, did you watch the video? It's not the stainless model, USE MAKEITWORK code for 10% off
Hey brother what kind of grill do you have?
❤wow delicious 🤤
I’m going to do it just like Arnie does it man, fast and hot! I’m a new dad so fuck smoking for 20 hours🤣 I’d do it this way regardless lol
Can you use the brisket rub on any other meats
Always personal preference but yes we actually like it alot on chicken and pork ribs, but thats us. Tnx
ahhh no dance but I'm sure it still tasted good - ok ok looks good - takecare buddo
@arnie what stores are carrying your rubs?
Several stores all over Texas Oklahoma, where do you live?
@@ArnieTexNorth Dallas TX
working hard as hell to sell your rub lol
could this be cooked directly over charcoal on a Weber kettle
You'll never want to put a brisket over direct heat on a weber kettle, too much heat. Put your coals on one side and the brisket on the cool side. Put your lid vent over the meat. We normally cook them on an offset however my son did a 14lb'er on his weber kettle and it was great. Once you get your bark where you want it, wrap it and finish it. Let it rest at least an hour.
I agree with Skunk Monkey
😎👍🏻
Could I cook a small brisket fast in an offset smoker? 🤔
Yes
I have been cooking them hot and fast in my Pit Barrel Cooker for years. In my opinion it gets you 99% there compared to low and slow with 40% of the effort.
is that a whole brisket or a flat or point?
Whole
Is not the same as an low&slow job
👌👍👍👍💯🪵
I'm guessing the fat doesn't render with a cook this fast huh?
That’s a shame your APM brisket rub has MSG. MSG is a neurotoxin, no thanks. 🤠
