Hi Kurt and Donald I tried your Mocha chiffon cake roll last night it was very delicious only thing is I didn’t perfect the caramel syrup when I was making the syrup the sugar started getting clumpy so what I did is I added more water into it I use white sugar and It didn’t reach the light amber color so I added 1 tbsp of light brown sugar and boil it while using a whisk on a medium flame it didn’t turn out light brown in color anyway I still drizzle the very light colored caramel on the cake and here it’s what it looks like

Sorry to hear about the caramel not turning out as you'd hoped - for next time, I'd suggest just leaving the white granulated sugar and water to melt (while swirling... like in the video) and trust that it will become amber in color eventually. I understand the initial clumping might cause panic, but it's best *not* to stir the mixture and *not* to add any additional water or light brown sugar. The sugar will dissolve in the water and melt, then the caramelization to an amber/copper color will come eventually. Hope this helps! :) And I'd love to see pictures of your Mocha Roll! Hello - sa tingin ko ay pwedeng isteam din yung mga chiffon cakes. Steaming ay mas mabilis kaysa sa pagbe-bake. 10 minuto lamang ang luto sa steaming sa halip na 20 minuto kung baking sa oven. Gayundin, ang steaming ay mas nakakatuyo ng cake kaya kailangan mong magdagdag ng vegetable oil para moist at hindi tuyo ang cake. Dahil hindi ko pa talaga nasubukan ang paraang steaming, hindi ko pa sigurado kung gaano eksaktong vegetable oil ang kailangang idagdag. Pero pwede mong subukan na magdagdag ng 1/2 cup vegetable oil sa halip na 1/3 cup na nakalagay sa recipe. Hope this helps! :)

Instead of using egg whites in frosting, (im not a fan or meringue frosting) can i use the butter with heavy cream instead? Or if not, can you recommend any substitute? Thank you!! 😊 I liked the ube cake roll frosting you made 💕

I do not recommend stabilizing heavy cream with butter. If you like the ube cake roll frosting, I'd suggest following that recipe and stabilize the heavy cream using cream cheese, and add instant espresso powder to make it mocha flavored. Hope this helps! :)

The sugar will dissolve in the water and melt, then the caramelization to an amber/copper color will come eventually. Hope this helps! :)

Hello - sa tingin ko ay pwedeng isteam din yung mga chiffon cakes. Steaming ay mas mabilis kaysa sa pagbe-bake. 10 minuto lamang ang luto sa steaming sa halip na 20 minuto kung baking sa oven. Gayundin, ang steaming ay mas nakakatuyo ng cake kaya kailangan mong magdagdag ng vegetable oil para moist at hindi tuyo ang cake. Dahil hindi ko pa talaga nasubukan ang paraang steaming, hindi ko pa sigurado kung gaano eksaktong vegetable oil ang kailangang idagdag. Pero pwede mong subukan na magdagdag ng 1/2 cup vegetable oil sa halip na 1/3 cup na nakalagay sa recipe. Hope this helps! :)

Instead of using egg whites in frosting, (im not a fan or meringue frosting) can i use the butter with heavy cream instead? Or if not, can you recommend any substitute? Thank you!! 😊

I do not recommend stabilizing heavy cream with butter. If you like the ube cake roll frosting, I'd suggest following that recipe and stabilize the heavy cream using cream cheese, and add instant espresso powder to make it mocha flavored. Hope this helps! :)
