From what I remember from reading the books, it is possible to get a Dæmon that’s aquatic. I think it happens to people like sailors who spend a lot of time at sea. If it does happen, that person will be restricted to staying at sea or at least be able to stay close to it. Especially if the Dæmon settled into a dolphin form, then that person will have to be far enough at sea where their Dæmon is able to swim. Hope this answers your questions. :)
Yup, it's actually discussed in the first book. Lyra is on a ship and gets scared that Pantalaimon will settle as a dolphin because he likes that shape. A sailor tells her that he knew a man with a dolphin daemon who could never go on land because of that.
