This green seasoning is the foundation of most Caribbean dishes...I made green seasoning a few months ago and my brother in law ( American) thought it was cooked collard greens and put it on white rice and ate it. I was completely lost for words, because he told my sister it was delicious. I'm still baffled down to this day.

Agreed with your version of green seasoning . There is no need to add water because the leaves are 98%water. Also, try dropping some chilli peppers, garlic or thyme in individual oil bottles to saturate before using and you will taste the difference....amazing

I make my green seasoning the excat same way....i just recently started grinding bk my garlic and i used your tip to preserve it with a little oil...i too love the big leaf time as well but it flicks up yuh seasoning man...if i using it ill grind up some now fuh now... my basic seasoning is shadon beni garlic and pemento...AND HAPPY FATHER'S DAY!!!!

Is the shadow Beni has to be dry. I did mine like yours but my shadow Beni was wet and it came out a little wet not as dry as yours. I also do a separate batch with chive onion parsley cilantro garlic and the big leaf tyme. Also pimento if I have. Since looking at you I do batch like what you just made. Mine do not smell or spoil and it last me about two weeks in the fridge.
Hi Dawne it does not usually have to be throughly dry, but when we do wash it, we do let it drain a bit. I usually blend seasoning for a month's supply. But thats ok if it came out a little more moist once its not watery.

Grated ginger. Cinnamon powder bbc kup and brown suger. Its the bomb i simmered to a tick consistency.
